      Pengaruh Pre-Treatment Sonikasi dan Penambahan CMC (carboxymethyl cellulose) terhadap Kestabilan Suspensi, Kandungan Fitosterol dan Serat Pangan Sari Jagung

      Abstract
      Pola makan yang tidak sehat termasuk konsumsi makanan tinggi gula, garam, dan lemak serta rendah serat telah menyebabkan ketidakseimbangan gizi dengan peningkatan kolesterol darah yang berdampak pada peningkatan berat badan dan lemak tubuh. Upaya menjaga kadar kolesterol dapat menggunakan bahan alami, seperti jagung. Jagung manis mengandung senyawa potensial yaitu fitosterol dan serat pangan yang dapat menurunkan kadar kolesterol. Penelitian ini bertujuan melihat pengaruh pretreatment sonikasi dan penambahan CMC (carboxymethyl cellulose) terhadap kestabilan suspensi, fitosterol dan serat pangan sari jagung. Hasil penelitian menunjukkan kadar fitosterol dapat meningkat pada perlakuan sonikasi, sedangkan pada kadar serat meningkat pada perlakuan sonikasi serta penambahan CMC. Kadar fitosterol sari jagung perlakuan sonikasi, penambahan CMC, dan sonikasi diikuti penambahan CMC berturut-turut dapat meningkat 29,77; 13,76; dan 2,40 kali lebih tinggi dibanding sari jagung tanpa perlakuan. Kadar serat pangan sari jagung perlakuan sonikasi diikuti penambahan CMC menghasilkan 1,13 kali (12,80%) lebih tinggi dibanding sari jagung tanpa perlakuan, sedangkan perlakuan sonikasi tanpa penambahan CMC tidak berbeda nyata dengan sari jagung tanpa perlakuan. Penelitian ini berpotensi membuka peluang baru dalam memanfaatkan jagung sebagai produk olahan dengan manfaat fungsional dan dapat menjadi alternatif bagi individu yang alergi terhadap susu sapi.
       
      Unhealthy eating patterns, including the consumption of high sugar, salt, and fast food low in fiber, have led to nutritional imbalances with elevated blood cholesterol, resulting in increased body weight and fat. Attempts to maintain cholesterol levels can use natural ingredients, such as corn. Sweet corn contains potential compounds, namely phytosterols and dietary fiber, which can help reduce cholesterol levels. This study aims to investigate the impact of pretreatment sonication and the addition of CMC (carboxymethylcellulose) on the suspension stability, phytosterol, and dietary fiber content of corn milk. The results indicate that the phytosterol contents increase with sonication treatment, while both sonication and CMC addition lead to increased dietary fiber content. The phytosterol content in sonicated corn milk, CMC addition, and sequential sonication followed by CMC addition can increase by 29,77; 13,76; and 2,40 times higher than in untreated corn milk. The dietary fiber content in sonicated corn milk followed by CMC addition is 1,13 times (12,80%) higher than untreated corn milk, whereas sonication treatment without CMC addition shows no significant differences from untreated corn milk. This research has the potential to create new opportunities for utilizing corn as a processed product with functional benefits. It could serve as an alternative for individuals with a dairy allergy.
