dc.description.abstractQuality is considered as the main factor of food processing industry. One tool that important to control food quality is Statistical Process Control (SPC). Unconformity (product reject) is one of many quality problem in all manufacturing product such as Milkuat Pouch in PT Danone Dairy Indonesia. This cooperation has a minimum limit of unconformity specification standard, i.e. it must be less than 1,7% of the actual output production. This parameter show us how much losses earned, compares to raw material and packaging material aspect of the filling process. This product consist of two main material, water and fresh milk. The purpose of this research is to apply SPC in monitoring the unconformity quality of the product in filling machine area. The method concept which used to solve this problem are observation and identification of problems, brainstorming, control chart, fishbone diagram, pareto diagram and action plan. The conclusion of problem identification is the number of unconformity in machine 15 and 16 was out of standard spesification. Measurement results of samples 125 batches (15 days production in first shift) using np-chart and p-chart of control charts, indicating that the process is out of control, and the percentage shows the unconformity product is more than 1,7%, it means there still occuring many various errors that impact to defect in the final product. The causes of unconformity problem were classifieed by fishbone and pareto diagram analysis. This analysis is done by observation of each batch production for 15 days in first shift on each machine, machine tube AC, AD, AE, and AF. The action plan has been constructed to eliminate 80% of root cause so that it would reduce the unconformity of product.en
