dc.description.abstractSohun is a non-wheat noodle product that is made with a typical shape from starch base material. Sohun can be categorized based on the used flour such as mung beans, sago, sugar palm, etc. CV Panca Jaya is one of the medium enterprises which produced sohun since 1984. Kembang Matahari® is a brand name of it. Drying process in this factory is still using sunlight as an energy system. It requires a lot of human resources and also a huge area, so a rising inflation will give direct impacts on the increasing components of cost production, especially on labor wages significantly. This study has done a simulation of sohun production process using cabinet dryer with software RSM (Response Surface Methodology). The result of the optimization process showed that cabinet drying gave similar product with sun dryingen
