dc.description.abstractThe aim of this study was to identify the nutritional content of fig fruits including macro and micro nutrient, antioxidant, phytochemical, as well as the panelis preferenees. Three varieties of figs from “Sentra Tin” Bekasi were used in this study i.e Green Yordan, Purple, and Negronne. The macro nutrient content of figs were as follow (% wb) moisture 86.34, 80.57, 82.10, ash 0.75, 0.86, 0.96, protein 1.45, 1.48, 1.91, fat 0.14, 0.22, 0.56, crude fiber 2.30, 2.18, 2.77, total carbohydrate 9.01, 14.67, 11.70, and reducing sugar 1.70, 3.00, and 4.66 respectively. The micronutrient content were as follow (mg/100g) sodium content 2.11, potassium content 854.05, calcium content 104.79, and zink 1.10 respectively. Total phenolic content were as follow (mgGAE/100g) 20.28, 10.38, 28.72 respectively. The three fruits content antocyanin were as (μg/g) 61.48, 59.93, 156.29. Antioxidant of Green Yordan and Negronne are very active (mg) 29.75 and 39.75 respectively. Green Yordan is the most prefered by the panelis with percentage of acceptability 93.33%. The nutritional content of fig cultivated in Indonesia were compared with the production in other country or origin.en
