Waterleaf (Talinum triangulare (Jacq.) Willd) is one of tropical plant and has long been used as herbs and vegetables. It contains pectin which is soluble dietary fiber component and performs ability to reduce cholesterol and LDL level in blood. The aim of this research was to study the effect of organic fertilization results on mono- and oligosaccharides profile of waterleaf at wet season. The organic fertilizers were cow manure (CM), rock phosphate (RP), and rice-hull ash (HA). There were four combination of treatment: RP+HA, CM+HA, CM+RP, and CM+RP+HA, also control (no-fertilizer). The result of this research shows that the highest monosaccharides was the waterleaf of control (1025.79 mg/100 g dry basis); the highest oligosaccharides was the waterleaf of CM+RP+HA fertilization (87.61 mg/100 g dry basis); and the highest total carbohydrates was the waterleaf of no-fertilization (1365.20 mg/100 g dry basis). The organic fertilization did not significantly affect the mono-, oligosaccharides, and total carbohydrates in waterleaf (p>0.05).
