Efektivitas sanitaiser komersial untuk menginaktivasi bakteri patogen dan biofilm
Abstract
Foodborne diseases are considered an emergent public health problem in both developed and developing countries. It can be defined as diseases commonly transmitted through food and caused by pathogenic bacteria, spoilage bacteria, virus, parasite or chemical contaminants. The objective of this study is to evaluate the effectiveness of commercial sanitizers against pathogenic bacteria and biofilms Salmonella Typhimurium and Staphylococcus aureus. Commercial sanitizers used in this study are single sanitizers (quats, PAA) and combination sanitizers (X, Y, Z). The study shows that sanitizer X and Z in concentration 0.015 % are the most effective sanitizer against S. Typhimurium and sanitizer X in concentration 0.005 % is the most effective sanitizer against S. aureus. In addition, the study shows that sanitizer X is the most effective sanitizer against biofilm with the range of reduction is 3.94-5.02 log CFU/cm2. Penyakit bawaan pangan menjadi masalah kesehatan baik di negara maju maupun berkembang. Penyakit bawaan pangan adalah penyakit yang ditransmisikan melalui makanan dan disebabkan oleh bakteri patogen, bakteri pembusuk, virus, parasit atau kontaminan kimia. Tujuan penelitian ini adalah mengevaluasi efektiviats sanitaiser komersial untuk menginaktivasi bakteri patogen dan biofilm Salmonella Typhimurium dan Staphylococcus aerus. Sanitaiserkomersial yang digunakan dalam penelitian ini adalah sanitaiser tunggal (quats, PAA.) dan sanitaiser kombinasi (X, Y, Z).
