dc.description.abstractFoodborne disease was one of main causes of mortality and morbidity in Indonesia. The food safety surveillance is required to detect, monitor, evaluate, and control the trend of food safety issues. Microbial and chemical risks frequently are found in food products either fresh or processed. The internship done at National Agency for Drug and Food Control RI (NADFC RI) was subjected to determine priority parameters for surveillance of microbial and chemical hazards and develop sampling protocols for these parameters. Tools used to determine the risks priority was qualitative approach of risk assessment. In order to estimate risks, three group of data were collected and assessed including severity of hazards, consumption patterns, and hazards prevalence in food products. Each indicators was ranked in some level; such as very high, high, medium, low, or very low; and then scored. Thereafter, those level combined and calculated to determine end level of each risk. Protocols were made to risks which have a high priority. The results for microbial parameter indicated that from 14 hazards combination list, Bacillus cereus in rice and Salmonella Typhimurium in chicken meat have the highest priority, while almost Listeria monocytogenes in food stuff has lower priority. Whereas for chemical parameter indicated that aflatoxin B1 in peanuts and corn have the highest priority, while heavy metal in street-food has low priority.en
