      Abstract
      Dalam beberapa tahun terakhir ikan kerang-kerangan khususnya kerang hijau berkembang cukup pesat. Pemanfaatan daging kerang hijau pada beberapa unit-unit pengolahan dapat berupa daging segar atau yang sudah dibekukan, bentuk yang sudah kering, asap-asin.
