      Formulasi Minuman Teh Melati RTD dan Desain Proses Sterilisasi UHT-nya

      Abstract
      Pesatnya permintaan pasar terhadap minuman teh siap minum (ready-to- drink/RTD) menuntut industri untuk terus melakukan optimasi formula guna memenuhi preferensi konsumen dan standar keamanan pangan. Penelitian ini bertujuan merancang rekomendasi desain sterilisasi Ultra-High Temperature (UHT) serta menentukan formulasi terbaik pada kategori sugar-free, less sugar, dan original sugar menggunakan bahan baku premix teh hitam melati. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor: konsentrasi teh (0,4%; 0,5%; 0,6%; 0,7%) dan konsentrasi gula (0%; 4,5%; 7%). Evaluasi sensori dilakukan oleh 45 panelis tidak terlatih menggunakan uji rating hedonik pada parameter warna, aroma, rasa, dan overall. Berdasarkan suhu 136°C dengan debit maksimum 8000 L/jam, untuk mencapai nilai F0 = 3,0 menit, holding time dan holding tube yang diperoleh yakni 5,825 detik dan 18,917 m secara berurutan. Hasil penelitian menunjukkan bahwa formula terbaik untuk kategori sugar-free adalah konsentrasi teh 0,4%, sedangkan untuk kategori less sugar dan original sugar adalah konsentrasi teh 0,5%. Penggunaan bahan baku premix teh hitam melati menunjukkan hasil keberterimaan produk yang cukup memuaskan dan tingkat kesukaan yang positif pada masing-masing kategori, dengan nilai overall tertinggi antara ketiga kategori terdapat pada formula terpilih kategori less sugar dan original sugar yang sama-sama memperoleh skor 5,51. Ketiga formula tersebut telah memenuhi standar SNI 3143:2011 dengan kadar polifenol > 400 mg/kg.
       
      The rapidly growing market demand for ready-to-drink (RTD) tea beverages requires industries to continuously optimize formulas to meet consumer preferences and food safety standards. This study aims to design recommendations for the Ultra-High Temperature (UHT) sterilization process and determine the formulations for sugar-free, less sugar, and original sugar categories using black jasmine tea premix. The study employed a Completely Randomized Design (CRD) with two factors: tea concentration (0.4%; 0.5%; 0.6%; 0.7%) and sugar concentration (0%; 4.5%; 7%). Sensory evaluation was conducted by 45 untrained panelists using a hedonic rating test to assess liking for color, aroma, taste, and overall acceptability. Based on a temperature of 136°C with a maximum flow rate of 8000 L/h, to achieve the value F0 = 3.0 minutes, the calculated holding time and holding tube length were 5.825 seconds and 18.917 m respectively. Results indicated that the best formula for sugar-free category was 0.4% tea concentration, whereas the selected formulations in the less sugar and original sugar categories contained 0.5% tea concentration. The use of black jasmine tea premix resulted in satisfactory product acceptability and positive consumer liking across all categories, with the highest overall score between the three categories observed in the selected formulation within the less sugar and original sugar category, both scoring 5.51. All three formulas complied with the SNI 3143:2011 standard, with polyphenol levels exceeding 400 mg/kg.
