      Abstract
      Parameter suhu sealing yang ditetapkan dalam dokumen Quality Control Point (QCP) pada kemasan pouch susu kental manis di PT XYZ tidak sesuai dengan kondisi operasional produksi, sehingga perlu dilakukan evaluasi dan validasi untuk menetapkan rentang suhu sealing yang sesuai. Penelitian ini bertujuan (1) mengevaluasi suhu sealing berdasarkan kondisi operasional produksi, (2) memvalidasi parameter suhu acuan proses sealing melalui pendekatan concurrent validation, (3) memverifikasi parameter suhu acuan pada produksi komersial, dan (4) memperbarui parameter suhu QCP dalam dokumen HACCP berdasarkan hasil validasi dan verifikasi. Suhu aktual proses diobservasi dan dianalisis kestabilannya menggunakan peta kendali X–MR untuk memperoleh suhu acuan (reference point) pada setiap unit sealer, kemudian divalidasi melalui empat kombinasi suhu terhadap suhu acuan, yaitu Trial 1 (suhu acuan -15°C), Trial 2 (suhu acuan-10°C), Trial 3 (suhu acuan +10°C), dan Trial 4 (suhu acuan +15°C). Integritas sealing dievaluasi melalui vacuum test pada kemasan kosong dan pressure test pada kemasan berisi produk. Hasil validasi menetapkan operating window suhu sealing pada rentang suhu acuan ±10°C, dengan Trial 2 sebagai batas bawah dan Trial 3 sebagai batas atas yang memenuhi kriteria penerimaan, sedangkan Trial 1 dan Trial 4 berada di luar rentang yang direkomendasikan. Suhu acuan sebagai parameter operasional dikonfirmasi melalui verifikasi pada tiga batch produksi komersial dengan total 1.639.230 kemasan, pengujian 3.456 sampel berdasarkan AQL yang seluruhnya lulus (zero defect), serta tingkat kebocoran harian 0,003–0,020%, lebih rendah dari batas toleransi perusahaan sebesar 0,050%. Penelitian ini menjadi dasar pembaruan parameter suhu QCP dalam dokumen HACCP untuk mendukung implementasi FSSC 22000 di PT XYZ.
       
      The sealing temperature parameters specified in the Quality Control Point (QCP) document for condensed milk pouch packaging at PT XYZ do not correspond to the operational conditions of commercial production, necessitating evaluation and validation to establish a sealing temperature range appropriate for the process conditions. This study aimed to (1) evaluate sealing temperature based on operational production conditions, (2) validate the reference sealing temperature parameters using a concurrent validation approach, (3) verify the reference temperature parameters in commercial production, and (4) update the QCP temperature parameters in the HACCP document based on the validation and verification results. The actual process temperature was observed and its stability was analyzed using an X–MR control chart to determine the temperature reference point for each sealer unit. The reference temperature was subsequently validated through four temperature combinations, namely Trial 1 (reference temperature -15°C), Trial 2 (reference temperature -10°C), Trial 3 (reference temperature +10°C), and Trial 4 (reference temperature +15°C). Sealing integrity was evaluated using a vacuum test on empty pouches and a pressure test on productfilled pouches. The validation results established a sealing temperature operating window within ±10°C of the reference temperature, with Trial 2 and Trial 3 serving as the lower and upper limits, respectively, that met the acceptance criteria, while Trial 1 and Trial 4 were outside the recommended range. The reference temperature as an operational parameter was confirmed through verification in three commercial production batches, involving a total of 1,639,230 packages. A total of 3,456 samples were tested based on the AQL and all samples passed (zero defect), while the daily leakage rate ranged from 0.003–0.020%, lower than the company tolerance limit of 0.050%. This study provides a basis for updating the QCP sealing temperature parameters in the HACCP document to support the implementation of FSSC 22000 at PT XYZ.
