      "Pengaruh Penambahan Biji Selasih (Ocimum Basilicum L.) dan Biji Chia (Salvia Hispanica L.) terhadap Kualitas Tekstur dan Sineresis pada Produk Agar-Agar

      Abstract
      Biji selasih (Ocimum basilicum L.) dan biji chia (Salvia hispanica L.) memiliki kemampuan membentuk musilago yang berpotensi sebagai hidrokoloid alami untuk memperbaiki sifat fisik produk pangan. Potensi tersebut sangat relevan jika diaplikasikan pada agar-agar, yaitu produk pangan berbasis gel yang kualitasnya dipengaruhi oleh karakteristik tekstur, kestabilan selama penyimpanan, dan penerimaan konsumen. Penelitian ini bertujuan menganalisis pengaruh penambahan biji selasih dan biji chia terhadap karakteristik tekstur, sineresis, dan penerimaan konsumen pada produk agar-agar. Penelitian menggunakan rancangan acak lengkap dengan lima perlakuan, yaitu kontrol, penambahan biji selasih 2% dan 4%, serta biji chia 2% dan 4%. Karakteristik tekstur dianalisis menggunakan Texture Profile Analysis (TPA), kestabilan produk dievaluasi melalui uji sineresis, sedangkan penerimaan konsumen dianalisis menggunakan uji rating hedonik. Hasil penelitian menunjukkan bahwa penambahan biji selasih dan biji chia memberikan pengaruh nyata terhadap parameter adhesiveness, cohesiveness, springiness, gumminess, dan chewiness, tetapi tidak berpengaruh nyata terhadap hardness. Penambahan kedua jenis biji juga menurunkan nilai sineresis sehingga meningkatkan kemampuan matriks agar dalam mempertahankan air selama penyimpanan. Pada uji sensori, penambahan biji memengaruhi atribut warna, rasa, tekstur, dan penerimaan keseluruhan, tetapi tidak berpengaruh terhadap aroma. Penambahan biji selasih dan biji chia pada konsentrasi 2% menghasilkan keseimbangan terbaik antara karakteristik fisik dan penerimaan konsumen, sehingga berpotensi dimanfaatkan sebagai sumber hidrokoloid alami dalam pengembangan produk agar-agar.
       
      Agar-agar is a gel-based food product whose quality is determined by its textural characteristics, storage stability, and consumer acceptance. Basil seeds (Ocimum basilicum L.) and chia seeds (Salvia hispanica L.) have the ability to form mucilage, making them potential natural hydrocolloids to improve the physical properties of food products. This study aimed to analyze the effect of adding basil seeds and chia seeds on the textural characteristics, syneresis, and consumer acceptance of agar-agar products. A completely randomized design with five treatments was utilized: control, 2% and 4% basil seed addition, and 2% and 4% chia seed addition. Textural characteristics were analyzed using Texture Profile Analysis (TPA), product stability was evaluated through syneresis testing, and consumer acceptance was assessed using a hedonic rating test. The results demonstrated that the addition of basil seeds and chia seeds significantly affected adhesiveness, cohesiveness, springiness, gumminess, and chewiness parameters, but had no significant effect on hardness. The addition of both seed types also reduced syneresis values, thereby enhancing the water-retention capacity of the agar matrix during storage. In the sensory evaluation, seed incorporation influenced color, taste, texture, and overall acceptance attributes, but had no significant effect on aroma. The addition of basil seeds and chia seeds at a 2% concentration achieved the optimal balance between physical properties and consumer acceptability, highlighting their potential application as natural hydrocolloids in agar-agar product development.
