      Desain Pretreatment Beras untuk Mengurangi Produk Popped Rice Cake Tidak Mengembang di PT XYZ

      Abstract
      PT XYZ, produsen makanan ringan bebas gluten berorientasi Contract Development and Manufacturing Organization (CDMO) mendapati permasalahan berupa tingginya persentase produk cacat tidak mengembang (non-popping defect). Pretreatment existing dengan penambahan air 3,5% serta prosedur pencampuran minyak sebelum air (oil-first) menghasilkan produk defect bentuk yang masuk kategori reject (group D) sebesar 12,13 ± 1,22%. Penelitian ini mendesain pretreatment baru dengan kadar air target teoretis 20% dan urutan pencampuran air sebelum minyak (water-first) pada suhu 30°C dan 60°C berskala laboratorium (5 kg beras sosoh per batch). Hasil menunjukkan metode penambahan air sehingga kadar air teoritis 20 dengan menggunakan air bersuhu 30°C dengan prosedur water-first mampu menurunkan persentase produk defect group D secara signifikan menjadi 8,17 ± 0,82% (p = 0,049, r = 0,801). Kadar air produk akhir pasca-popping (4,6977 ± 0,0347%) tidak berbeda signifikan dibanding kontrol (4,3467 ± 0,0238%, p = 0,121), mengonfirmasi nihilnya biaya utilitas sekunder. Implementasi desain usulan diproyeksikan dapat menghemat biaya bahan baku Rp35.654.652,00 per bulan serta menyelamatkan 923,32 kg beras menjadi produk bernilai ekonomi.
