| dc.description.abstract | Sarapan merupakan salah satu waktu makan penting bagi anak sekolah untuk
memenuhi kebutuhan energi dan zat gizi serta mendukung aktivitas belajar. Namun,
keterbatasan waktu dalam menyiapkan sarapan dapat mendorong kebutuhan akan
pangan siap santap yang praktis terus meningkat. Salah satu alternatif yang
berpotensi dikembangkan adalah pangan steril ready-to-eat karena memiliki umur
simpan panjang, aman dikonsumsi, dan dapat disimpan pada suhu ruang. Penelitian
ini bertujuan mengembangkan nasi daun jeruk steril serta mengevaluasi kecukupan
panas, kandungan gizi, penerimaan sensori, dan umur simpan produk. Penelitian
dilakukan melalui pengembangan formulasi, uji kecukupan panas, kandungan gizi,
sensori, dan umur simpan. Hasil penelitian menunjukkan formulasi terbaik
menggunakan 100 g beras dan 160 mL air dengan lauk ayam suwir daun jeruk dan
telur orak-arik serta waktu sterilisasi 50 menit. Sterilisasi komersial pada suhu
aktual 111 °C menghasilkan nilai F0 3,8 menit sehingga memenuhi kecukupan
proses sterilisasi. Produk memberikan kontribusi AKG harian anak usia 7–9 tahun
sebesar 18,33% energi, 60,48% protein, 13,02% karbohidrat, 26,83% serat pangan,
11,05% natrium, 15,24% lemak, dan 6,41% gula. Hasil uji sensori menunjukkan
produk diterima dengan baik oleh anak sekolah. Umur simpan berdasarkan
parameter aroma telur pada ordo satu adalah 8,8 bulan pada 25 °C dan 7,0 bulan
pada 30 °C. | |
| dc.description.abstract | Breakfast is an important meal for school-aged children to meet their energy
and nutrient requirements and support learning activities. However, limited time
for breakfast preparation has increased the need for practical ready-to-eat foods.
Commercially sterilized ready-to-eat products are a promising alternative because
they have a long shelf life, are safe for consumption, and can be stored at room
temperature. This study aimed to develop commercially sterilized kaffir lime rice
and evaluate its sterilization adequacy, nutritional value, sensory acceptance, and
shelf life. The results showed that the selected formulation consisted of 100 g of rice,
160 mL of water, shredded chicken with kaffir lime leaves, scrambled egg, and a
sterilization time of 50 min. Commercial sterilization at an actual temperature of
111 °C produced an F0 value of 3.8 min, meeting the required sterilization
adequacy. One serving contributed 18.33% of daily energy, 60.48% protein,
13.02% carbohydrate, 26.83% dietary fiber, 11.05% sodium, 15.24% fat, and
6.41% sugar requirements for children aged 7–9 years. The product sensory
evaluation was well accepted by schoolchildren and had an estimated shelf life of
8,8 months at 25 °C and 7,0 months at 30 °C. | |
