      Pengembangan Nasi Goreng Steril Komersial Menggunakan Panci Presto Modifikasi

      Abstract
      Perubahan gaya hidup masyarakat yang semakin padat dan dinamis serta mengutamakan kepraktisan mendorong peningkatan permintaan terhadap produk ready-to-eat yang bukan hanya praktis dan aman tetapi juga memiliki komposisi gizi yang lebih baik, serta tahan penyimpanan di suhu ruang. Penelitian ini bertujuan mengembangkan produk nasi goreng steril komersial dalam kemasan retort pouch menggunakan panci presto modifikasi, meliputi formulasi, validasi proses termal, scale-up produksi, karakterisasi fisikokimia produk, serta penerimaan konsumen. Formulasi nasi goreng steril komersial terdiri dari penentuan bahan baku, rasio beras:air dan waktu sterilisasi. Penentuan rasio beras:air dan waktu sterilisasi dilakukan melalui uji ranking oleh 25 panelis, menghasilkan perlakuan terpilih rasio beras:air (1:2) dengan waktu proses 65 menit pada suhu 110°C. Uji distribusi panas menunjukkan keseragaman suhu yang baik di seluruh bagian panci presto. Uji penetrasi panas memperoleh hasil F0 6,21 menit, mengonfirmasi bahwa proses sterilisasi yang diterapkan memenuhi kecukupan panas F0 = 3 menit sesuai ketentuan BPOM No. 27 Tahun 2021. Scale-up produksi dilakukan dengan kapasitas 50 kemasan per batch dengan harga pokok produksi (HPP) sebesar Rp. 7.976/kemasan. Uji rating penerimaan sensori oleh 65 panelis konsumen menunjukkan tingkat penerimaan yang baik pada tekstur dan overall. Penelitian ini menghasilkan nasi goreng RTE yang aman dan berpotensi dikembangkan pada skala industri UMKM.
       
      Changes in people’s increasingly busy and dynamic lifestyles, which prioritize convenience, are driving increased demand for ready-to-eat products that are convenient, safe, nutritious, and shelf-stable. This study aimed to develop sterilized fried rice packaged in retort pouches using a modified pressure cooker, encompassing formulation, thermal process validation, production scale-up, chemical characterization, and consumer acceptance evaluation. Formulation involved determining the raw materials, rice-to-water ratio, and sterilization time. The rice-to-water ratio and sterilization time were determined through a ranking test involving 25 panelists, resulting in a 1:2 rice-to-water ratio and a processing time of 65 minutes at 110 °C. Heat distribution testing showed good temperature uniformity throughout the pressure cooker, while heat penetration testing yielded an F0 value of 6.21 minutes, confirming that the sterilization process met the minimum heat sufficiency requirement of F0 = 3 minutes stipulated by BPOM Regulation No. 27 of 2021. Production was scaled up to 50 packages per batch, with a cost of goods sold (COGS) of Rp7,976 per package. A sensory acceptance rating test involving 65 consumer panelists indicated good acceptance of the product’s texture and overall quality. This study produced a safe RTE fried rice product with potential for development at the SME scale
