      Pengembangan Tablet Gula Merah-Jahe Siap Seduh dan Penyusunan Instruksi Kerja Pembuatannya di PT XYZ

      Abstract
      Tablet gula merah-jahe siap seduh merupakan produk minuman berbasis gula mengandung jahe yang menawarkan kepraktisan penyajian sekaligus memanfaatkan karakteristik gula merah dan jahe sebagai bahan utama. Penelitian ini bertujuan mengembangkan tablet gula merah-jahe siap seduh serta menyusun instruksi kerja proses produksinya di PT XYZ. Penelitian dilakukan melalui dua tahap, yaitu penentuan formula terbaik dengan pengamatan terhadap pembentukan padatan tablet. Selanjutnya, terhadap dua formula terbaik dilakukan evaluasi karakteristik fisikokimia, waktu larut, serta sensori. Parameter yang dianalisis meliputi kadar air, kekerasan, waktu larut, uji rating hedonik, dan ranking hedonik. Dari lima formula yang dikembangkan, dua formula berhasil membentuk tablet padat, yaitu F3 (4 B gula merah; 1 V ekstrak jahe; 0,5 V air) dan F5 (3,75 B gula merah; 1,25 V ekstrak jahe; 0,5 V air). Hasil menunjukkan bahwa F3 memiliki kadar air lebih rendah (0,55%), kekerasan lebih tinggi (7,72 kgf), dan penerimaan sensori yang lebih baik dibandingkan F5. Sebanyak 77,14% panelis memilih F3 sebagai formula yang paling disukai. Kedua formula memiliki waktu larut kurang dari dua menit. Temuan penelitian menunjukkan bahwa kombinasi proporsi gula merah dan ekstrak jahe berperan penting dalam pembentukan struktur tablet dan penerimaan konsumen. Formula F3 ditetapkan sebagai formula terbaik dan menjadi dasar penyusunan instruksi kerja produksi tablet gula merah-jahe siap seduh di PT XYZ
       
      Palm sugar-ginger tablets ready to brew represent a form of beverage innovation that offers convenience in preparation while leveraging the characteristics of palm sugar and ginger as key ingredients. This study aims to develop palm sugar-ginger tablets ready to brew and to develop work instructions for its production process at PT XYZ. The study consisted of two stages. The first stage determined the best formulation in forming solid tablets. The two best formulations were then evaluated for moisture content, hardness, dissolution time, and sensory acceptance using hedonic rating and ranking tests. Of the five formulations developed, only F3 (4 B palm sugar, 1 V ginger extract, and 0.5 V water) and F5 (3.75 B palm sugar, 1.25 V ginger extract, and 0.5 V water) successfully formed solid tablets. F3 showed lower moisture content (0.55%), higher hardness (7.72 kgf), and better sensory acceptance than F5. Overall, 77.14% of the panelists selected F3 as the most preferred formulation. Both formulations dissolved in less than two minutes. The results demonstrate that the proportion of palm sugar and ginger extract plays an important role in tablet formation and consumer acceptance. Formulation F3 was selected as the best formulation and used as the basis for preparing production work instructions at PT XYZ.
