dc.description.abstractPeningkatan prevalensi Diabetes Melitus (DM) berkaitan dengan gaya hidup tidak sehat dan pola konsumsi pangan tinggi karbohidrat sederhana. Salah satu upaya menurunkan respons glikemik adalah melalui modifikasi pangan dengan penambahan sumber protein dan serat. Penelitian ini bertujuan menganalisis indeks glikemik (IG) dan beban glikemik (BG) nasi rempah instan dengan penambahan daging ayam dan jamur kuping. Penelitian menggunakan desain eksperimental dengan pendekatan in vivo berdasarkan standar ISO 26642:2010 pada 12 subjek dewasa sehat. Hasil menunjukkan nasi rempah instan memiliki nilai IG 58,6 dan BG 13,6 untuk takaran saji 100 g. Nilai tersebut lebih rendah dibandingkan nasi putih yang memiliki nilai IG 76,8 dan BG 25,1. Penurunan respons glikemik dipengaruhi kandungan serat yang lebih tinggi pada nasi rempah instan (10,27%) dibandingkan nasi putih (4,52%), sehingga mampu memperlambat penyerapan glukosa. Kesimpulannya, modifikasi pangan melalui penambahan bahan dan pengolahan menjadi nasi rempah instan berpotensi menjadi alternatif pangan praktis untuk membantu mengendalikan kadar glukosa darah.
dc.description.abstractThe increasing prevalence of Diabetes Mellitus (DM) is associated with unhealthy lifestyles and dietary patterns characterized by a high intake of simple carbohydrates. One strategy to reduce the glycemic response is through food modification by incorporating protein and fiber sources. This study aimed to analyze the glycemic index (GI) and glycemic load (GL) of instant spiced rice with the addition of chicken meat and wood ear mushrooms. An experimental study with an in vivo approach was conducted following the ISO 26642:2010 standard involving 12 healthy adult subjects. The results showed that instant spiced rice had a GI of 58.6 and a GL of 13.6 per 100 g serving, which were lower than those of white rice (GI 76.8 and GL 25.1). The lower glycemic response was attributed to the higher dietary fiber content of instant spiced rice (10.27%) compared with white rice (4.52%), which slowed glucose absorption. In conclusion, food modification through ingredient addition and processing into instant spiced rice has the potential to serve as a practical alternative food to help control blood glucose levels.
