dc.description.abstractCara Produksi Pangan Olahan yang Baik (CPPOB) merupakan pedoman yang menjamin keamanan dan mutu produk pangan melalui pengendalian lingkungan produksi, fasilitas, peralatan, proses, dan personel. Penelitian ini dilatarbelakangi oleh belum optimalnya penerapan CPPOB pada area produksi PT XYZ akibat belum tuntasnya penyesuaian sistem kerja pascarelokasi fasilitas produksi. Pendekatan yang digunakan adalah prinsip kerja 5S (Seiri, Seiton, Seiso, Seiketsu, dan Shitsuke), yaitu pendekatan manajemen untuk menciptakan lingkungan kerja yang lebih produktif melalui pemilahan, penataan, pembersihan, standarisasi, dan pembentukan budaya disiplin. Penelitian ini bertujuan menganalisis pengaruh implementasi 5S terhadap tingkat kesesuaian CPPOB. Akar penyebab ketidaksesuaian diidentifikasi menggunakan fishbone diagram dan 5 Why analysis, ditindaklanjuti melalui implementasi 5S dengan pendekatan Plan-Do-Check-Act (PDCA). Sebelum implementasi, skor CPPOB sebesar 107 (kategori C/Kurang) dengan 13 ketidaksesuaian. Setelah implementasi, 9 dari 13 temuan berhasil diperbaiki (69,23%) dan skor meningkat menjadi 116 (kategori B/Baik).
dc.description.abstractGood Manufacturing Practices (GMP) are guidelines that ensure food safety and product quality through the control of the production environment, facilities, equipment, processes, and personnel. This study was motivated by the suboptimal implementation of GMP in the production area of PT XYZ due to the incomplete adjustment of the work system following the relocation of the production facility. The approach used in this study was the 5S methodology (Seiri, Seiton, Seiso, Seiketsu, and Shitsuke), a management approach aimed at creating a more productive work environment through sorting, organizing, cleaning, standardizing, and fostering a culture of discipline. This study aimed to analyze the effect of 5S implementation on the level of GMP compliance. The root causes of nonconformities were identified using a fishbone diagram and 5 Why analysis, followed by the implementation of 5S using the Plan-Do-Check-Act (PDCA) approach. Prior to implementation, the GMP compliance score was 107 (Category C/Poor), with 13 identified nonconformities. Following the implementation, 9 out of the 13 nonconformities (69.23%) were successfully resolved, resulting in an increase in the GMP compliance score to 116 (Category B/Good).
