      Pengaruh Penambahan CuCl2 terhadap Karakteristik Fisikokimia Bubuk Pewarna Pangan Kombinasi Ekstrak Daun Suji dan Daun Pandan

      Abstract
      Klorofil merupakan pigmen alami yang berpotensi dikembangkan sebagai alternatif pewarna pangan, namun pemanfaatannya masih terkendala karena sifatnya yang mudah terdegradasi selama proses pengolahan. Penelitian ini bertujuan mengkaji pengaruh penambahan CuCl2 terhadap karakteristik fisikokimia bubuk pewarna dari kombinasi ekstrak daun suji dan daun pandan. Bubuk pewarna dihasilkan melalui proses pengeringan semprot dengan penambahan CuCl2 pada konsentrasi 0, 25, 50, dan 75 ppm. Hasil penelitian menunjukkan bahwa penambahan CuCl2 dapat meningkatkan retensi klorofil sebesar 67,16–87,76% dibandingkan dengan kontrol, sekaligus memperbaiki mutu bubuk pewarna dari segi warna, kelarutan, dan aktivitas antioksidan. Konsentrasi CuCl2 50 ppm memberikan hasil terbaik, dengan total klorofil sebesar 6,08 mg/g, aktivitas antioksidan sebesar 42,89 mg AAE/g, kadar air sebesar 5,30%, dan kelarutan sebesar 97,13%. Konsentrasi CuCl2 75 ppm menghasilkan intensitas warna hijau yang lebih pekat, tetapi disertai kadar tembaga yang lebih tinggi serta penurunan aktivitas antioksidan. Secara keseluruhan, penambahan CuCl2 sebesar 50 ppm mampu meningkatkan mutu fisikokimia bubuk pewarna dari kombinasi ekstrak daun suji-pandan, baik pada parameter warna, kelarutan, total klorofil, kadar tembaga, dan aktivitas antioksidan.
       
      Chlorophyll is a natural pigment with potential as an alternative food colorant; however, its application is still limited due to its susceptibility to degradation during processing. This study aimed to examine the effect of CuCl2 addition on the physicochemical characteristics of coloring powder derived from a combination of suji and pandan leaf extracts. The coloring powder was produced through spray drying with the addition of CuCl2 at concentrations of 0, 25, 50, and 75 ppm. The results showed that the addition of CuCl2 increased chlorophyll retention by 67.16–87.76% relative to the control and improved the powder's color, solubility, and antioxidant activity. The addition of 50 ppm CuCl2 gave the best results, with a total chlorophyll content of 6.08 mg/g, antioxidant activity of 42.89 mg AAE/g, moisture content of 5.30%, and solubility of 97.13%. The addition of 75 ppm CuCl2 resulted in a more intense green color but was associated with higher copper content and decreased antioxidant activity. Overall, the addition of 50 ppm CuCl2 improved the physicochemical quality of the coloring powder from the combined suji-pandan extract in terms of color, solubility, total chlorophyll, copper content, and antioxidant activity.
