dc.description.abstractPenelitian dilaksanakan di PT XYZ Jakarta Timur pada periode September 2025 hingga Januari 2026. Sebanyak 60 lot produksi saus sambal digunakan sebagai sampel dengan tiga taraf suhu homogenisasi, yaitu 25°C, 28°C, dan 30°C. Parameter yang dijelaskan meliputi pH, total asam (TA), total garam (TS), viskositas, dan total padatan terlarut (°Brix). Data hasil pengujian dianalisis menggunakan Uji Kruskal-wallis nonfaktorial dengan uji lanjutan Dun bonfferoni pada taraf signifikansi 5%, kemudian dilanjutkan dengan hasil penelitian menunjukkan bahwa peningkatan suhu homogenisasi memberikan pengaruh nyata terhadap total asam (TA) dan nilai °Brix (p<0,05), tetapi tidak berpengaruh nyata terhadap pH, total garam, dan viskositas (p>0,05). Nilai total asam menurun dari 1,10% pada suhu 25°C menjadi 1,03% pada suhu 30°C, sedangkan nilai °Brix meningkat dari 40,94°Brix menjadi 41,25°Brix. Nilai pH (3,93–3,95), total garam (6,27–6,28), dan viskositas (43,35–43,70 cP) relatif stabil pada seluruh perlakuan serta masih memenuhi spesifikasi mutu perusahaan. Berdasarkan hasil tersebut, suhu homogenisasi 28°C direkomendasikan sebagai kondisi operasi yang paling optimal.
dc.description.abstractThis research was conducted at PT XYZ, East Jakarta, from September 2025 to January 2026. A total of 60 production lots of chili sauce were used as samples, tested at three levels of homogenization temperature: 25°C, 28°C, and 30°C. The parameters examined included pH, total acidity (TA), total salt (TS), viscosity, and total soluble solids (°Brix). The test data were analyzed using the non-factorial Kruskal-Wallis test, followed by Dunn-Bonferroni post hoc testing at a 5% significance level. The results showed that increasing homogenization temperature had a significant effect on total acidity (TA) and °Brix values (p<0.05), but no significant effect on pH, total salt, or viscosity (p>0.05). Total acidity decreased from 1.10% at 25°C to 1.03% at 30°C, while °Brix values increased from 40.94°Brix to 41.25°Brix. pH values (3.93–3.95), total salt (6.27–6.28), and viscosity (43.35–43.70 cP) remained relatively stable across all treatments and still met the company's quality specifications. Based on these results, a homogenization temperature of 28°C is recommended as the most optimal operating condition.
