| dc.description.abstract | Rata-rata konsumsi sayur masyarakat Indonesia masih rendah sehingga diperlukan inovasi pengolahan agar lebih diterima masyarakat. Penelitian bertujuan menganalisis karakteristik fisikokimia, aktivitas antioksidan, dan penerimaan organoleptik. Penelitian eksperimental menggunakan Rancangan Acak Lengkap yang terdiri dari penelitian pendahuluan dan penelitian utama. Penelitian pendahuluan yang bertujuan mempelajari pengaruh blansir pada okra serta pengaruh bentuk dan lama pengeringan okra yang optimal; sedangkan penelitian utama bertujuan mempelajari pengaruh bentuk dan lama pengeringan terhadap karakteristik fisikokimia, aktivitas antioksidan, dan organoleptik. Hasil penelitian pendahuluan menunjukkan bahwa keripik okra diblansir selama 30 detik suhu 97oC memiliki warna dan kekerasan yang lebih baik dibandingan keripik okra tanpa blansir dengan nilai L= 42,07, a= 9,09, dan b= 23,97, sedangkan tekstur N = 25,43 dan mm = 2,94. Hasil penelitian utama untuk kadar air, abu, protein, lemak, dan karbohidrat (bk) pada keripik okra utuh berturut-turut: 13,65; 9,25; 21,69; 1,04; dan 54,37%; sedangkan pada keripik okra potong: 12,03; 8,45; 19,26, 1,17, dan 59,09%. Aktivitas antioksidan keripik okra utuh memiliki persentase inhibisi, IC50, dan AEAC yang tidak berbeda nyata dibandingkan keripik okra potong, sebesar 26,05% vs 31,66%; IC50 3269 ppm vs IC50 2716 ppm; dan nilai AEAC 91 mg vs 112 mg AEAC/100 g. Uji organoleptik menunjukkan perbedaan nyata pada atribut warna. | |
| dc.description.abstract | The average vegetable consumption among Indonesians remains low, necessitating processing innovations to increase public acceptance. This study aimed to analyze the physicochemical characteristics, antioxidant activity, and organoleptic acceptance. The experimental study employed a completely randomized design consisting of a preliminary study and a main study. The preliminary study aimed to investigate the effect of blanching on okra as well as the optimal shape and drying time for okra; while the main study aimed to investigate the effect of shape and drying time on physicochemical characteristics, antioxidant activity, and organoleptic properties. Preliminary research results show that okra chips blanched for 30 seconds at 97°C have better color and hardness compared to okra chips without blanching, with values of L = 42.07, a = 9.09, and b = 23.97, while the texture values were N = 25.43 and mm = 2.94. The main study results for moisture content, ash, protein, fat, and carbohydrates (bk) in whole okra chips were, respectively: 13,65; 9,25; 21,69; 1,04; and 54,37%; while for cut okra chips: 12,03; 8,45; 19,26, 1,17, and 59,09%. The antioxidant activity of whole okra chips showed no significant difference in inhibition percentage, IC50, and AEAC compared to cut okra chips, at 26.05% vs. 31.66%; IC50 3269 ppm vs. IC50 2716 ppm; and AEAC values of 91 mg vs. 112 mg AEAC/100 g. Organoleptic testing revealed a significant difference in color attributes. | |
