      Abstract
      Ikan nila merupakan komoditas air tawar bernilai ekonomis tinggi yang bersifat mudah rusak (perishable food), sehingga memerlukan penanganan untuk memperlambat kemunduran mutu. Penelitian ini bertujuan mengkarakterisasi ekstrak etanol 80% (v/v) daun teh hijau (Camellia sinensis) serta menentukan konsentrasi terbaiknya sebagai bahan preservasi alami pada ikan nila selama penyimpanan suhu chilling. Penelitian menggunakan rancangan acak lengkap satu faktor dengan empat perlakuan, yaitu kontrol (akuades) serta ekstrak 1%, 1,25%, dan 1,5% (b/v). Pengamatan dilakukan pada hari ke-0, 3, 6, 9, dan 12 melalui analisis pH, total volatile base (TVB), total plate count (TPC), sensori, dan histologi. Ekstrak daun teh hijau mengandung senyawa fenolik dan flavonoid dengan aktivitas antioksidan sangat kuat (IC50 22,25 ppm). Perlakuan ekstrak 1,5% menghasilkan kemampuan terbaik dalam menghambat kemunduran mutu ikan nila dengan nilai TVB 19 mg N/100 g, TPC 5,39 log CFU/g, dan pH 6,71 pada hari ke-12, serta struktur jaringan otot yang lebih terjaga dibandingkan kontrol. Ekstrak daun teh hijau 1,5% merupakan perlakuan terbaik yang terbukti efektif sebagai bahan preservasi alami pada ikan nila, sehingga kualitas produk dapat dipertahankan hingga hari ke-9 pada kondisi penyimpanan suhu chilling.
       
      Tilapia is a high-value freshwater commodity that is highly perishable and requires preservation methods to maintain quality. This study aimed to characterize 80% (v/v) ethanol extract of green tea leaves (Camellia sinensis) and determine its optimal concentration as a natural preservative for nile tilapia during chilled storage. A completely randomized design with four treatments was used: control (aquades), 1%, 1.25%, and 1.5% (b/v) extract. Observations were conducted on days 0, 3, 6, 9, and 12 through pH, total volatile base (TVB), total plate count (TPC), sensory, and histological analysis. Green tea extract contained phenolic compounds and flavonoids with strong antioxidant activity (IC50 22.25 ppm). The 1.5% extract treatment demonstrated the best efficacy in inhibiting quality deterioration, with TVB of 19 mg N/100 g, TPC of 5.39 log CFU/g, and pH of 6.71 on day 12, along with better preserved muscle tissue structure. Green tea leaf extract at 1.5% concentration is the optimal natural preservative for nile tilapia, maintaining product quality until day 9 under chilled storage conditions.
