      Identifikasi Biomarker pada Ikan Kurisi dan Ikan Salem Berdasarkan Kemunduran Mutu dan Kandungan Formaldehida

      Abstract
      Ikan kurisi (Nemipterus nematophorus) dan ikan salem (Scomber japonicus) berpotensi membentuk formaldehida alami selama penyimpanan sehingga sulit dibedakan dari formalin sintesis. Penelitian ini bertujuan menganalisis perubahan mutu ikan selama penyimpanan beku serta mengidentifikasi biomarker kemunduran mutu. Sampel direndam dalam formalin 0%, 1%, dan 2% (v/v), kemudian disimpan pada suhu -20 °C selama 12 minggu. Pengujian meliputi organoleptik, pH, total volatile base (TVB), dimetilamina (DMA), formaldehida (FA), histologi, dan Sodium Dodecyl Sulfate-Polyacrylamide Gel Electrophoresis (SDS-PAGE). Hasil penelitian menunjukkan bahwa penyimpanan beku menurunkan mutu ikan yang ditandai dengan penurunan nilai organoleptik serta peningkatan pH, TVB, DMA, dan FA. Analisis multivariat diskriminan menunjukkan pemisahan kelompok perlakuan berdasarkan kombinasi parameter FA, pH, TVB, dan DMA, tetapi biomarker kemunduran mutu yang spesifik dan konsisten pada ikan kurisi dan ikan salem belum dapat diidentifikasi.
