dc.description.abstractPenerapan Cara Produksi Pangan Olahan yang Baik (CPPOB) merupakan prasyarat utama dalam menjamin keamanan pangan dan mendukung perpanjangan izin penerapan Program Manajemen Risiko (PMR) secara sukarela. Penelitian ini bertujuan mengevaluasi tingkat kepatuhan CPPOB pada produksi minuman yoghurt di PT XYZ serta menilai efektivitas tindakan perbaikan terhadap temuan audit. Metode yang digunakan adalah deskriptif evaluatif melalui observasi, wawancara, dan analisis dokumen berdasarkan standar CPPOB. Hasil evaluasi awal menunjukkan tingkat pemenuhan CPPOB umum sebesar 86,9% dan CPPOB proses sebesar 100%, yang mengindikasikan pengendalian produksi telah optimal. Setelah dilakukan pendampingan dan perbaikan, hasil audit eksternal menunjukkan peningkatan signifikan dengan tingkat pemenuhan mencapai 96%. Seluruh temuan telah ditindaklanjuti dan diverifikasi secara menyeluruh sehingga pemenuhan CPPOB mencapai 100%. Berdasarkan hasil akhir, sarana produksi PT XYZ memperoleh kategori A (sangat baik) dan memenuhi syarat untuk perpanjangan izin penerapan PMR sukarela.
dc.description.abstractThe implementation of Good Manufacturing Practices (GMP) is a fundamental prerequisite for ensuring food safety and supporting the voluntary renewal of the Food Safety Risk Management Program (PMR) certification. This study aimed to evaluate the level of GMP compliance in yoghurt drink production at PT XYZ and to assess the effectiveness of corrective actions taken in response to audit findings. The initial evaluation indicated a compliance level of 86.9% for general GMP and 100% for process GMP, suggesting that production control was well implemented. Following technical assistance and corrective actions, the external audit results demonstrated a significant improvement, with compliance reaching 96%. All findings were subsequently addressed and thoroughly verified, resulting in 100% compliance. Based on the results, PT XYZ’s production facility achieved Category A (Excellent) status and was declared eligible for the renewal of voluntary PMR implementation permit.
