dc.description.abstractKeamanan pangan harus diterapkan di dalam industri pangan untuk menghasilkan produk yang aman dan bermutu. Evaluasi penerapan CPPOB di UMKM XYZ yang memproduksi kopi bubuk mengacu pada peraturan Keputusan Kepala Badan Pengawas Obat dan Makanan Republik Indonesia Nomor HK.02.02.1.2.01.22.63 Tahun 2022 tentang Pedoman Pemeriksaan Sarana Produksi Pangan Olahan. Tujuan penelitian ini adalah mengidentifikasi kesenjangan penerapan CPPOB sebelum dan sesudah perbaikan, memberikan rekomendasi perbaikan penerapan CPPOB selama pendampingan, dan menyusun dokumen persyaratan CPPOB di UMKM XYZ. Kegiatan diawali dengan pengumpulan data primer dan sekunder, analisis kesenjangan awal penerapan CPPOB, pendampingan, penyusunan dokumen CPPOB, analisis kesenjangan akhir penerapan CPPOB, serta pendaftaran sertifikasi CPPOB. Hasil analisis menunjukkan nilai kesesuaian CPPOB di UMKM XYZ sebesar 48,60% dengan 38 temuan ketidaksesuaian sehingga dikategorikan dalam rating D (sangat kurang). Setelah dilakukan pendampingan, nilai kesesuaian meningkat menjadi 96,40% dengan 3 temuan ketidaksesuaian dan rating berubah menjadi A (sangat baik). Seluruh dokumen persyaratan pendaftaran IP-CPPOB telah disusun dan UMKM XYZ berhasil memperoleh sertifikat CPPOB.
dc.description.abstractThe implementation of food safety is required in the food industry to ensure that safe and high-quality products are produced. An evaluation of the implementation of Good Manufacturing Practices (GMP) at MSMEs XYZ, a ground coffee producer, was conducted based on the Regulation of the Head of the Indonesian Food and Drug Authority No. HK.02.02.1.2.01.22.63 of 2022 concerning the Guidelines for the Inspection of Processed Food Production Facilities. This study was aimed at identifying gaps in CPPOB implementation before and after corrective actions, providing recommendations for improvement during the mentoring process, and compiling the required CPPOB documentation at MSMEs XYZ. The activities were initiated through the collection of primary and secondary data, followed by an initial gap analysis, mentoring, the preparation of CPPOB documents, a final gap analysis, and registration for CPPOB certification. The results showed that a compliance score of 48,60% was achieved by MSMEs XYZ, with 38 nonconformities identified, resulting in a D rating (very poor). After mentoring was provided, the compliance score increased to 96,40%, with only 3 nonconformities recorded, raising the rating to A (excellent). All documents required for IP-CPPOB registration were compiled, and CPPOB certification was successfully obtained by MSMEs XYZ.
