      Analisis Kesenjangan Penerapan Cara Produksi Pangan Olahan yang Baik pada UMKM Arivandi Herbalindo Alami

      Abstract
      Pada tahun 2023, terdapat 1.722 kasus keracunan makanan di Indonesia, 64,46% di antaranya terkait makanan dan minuman akibat rendahnya penerapan CPPOB. Penelitian ini mendampingi UMKM Arivandi Herbalindo Alami di Bogor dalam menerapkan CPPOB untuk memperoleh sertifikat IP-CPPOB. Metode meliputi studi literatur, observasi, analisis kesenjangan, serta rekomendasi dan implementasi perbaikan. Sebelum pendampingan, tingkat ketidaksesuaian CPPOB tercatat 47% (33 temuan) dengan rating C (Kurang). Setelah pendampingan, kesesuaian meningkat menjadi 95% dengan hanya tiga ketidaksesuaian dan peringkat sarana produksi naik menjadi A (Sangat Baik). Uji statistik Wilcoxon Signed-Rank Test menunjukkan adanya perbedaan yang signifikan antara kondisi sebelum dan sesudah pendampingan (Asymp. Sig = 0,000 < 0,05), yang menandakan bahwa kegiatan pendampingan berkontribusi signifikan terhadap peningkatan penerapan CPPOB.
       
      In 2023, there were 1,722 food poisoning cases in Indonesia, with 64.46% linked to food and beverages due to poor implementation of Good Processed Food Production Practices (CPPOB). This study assisted the Arivandi Herbalindo Alami SME in Bogor in implementing CPPOB to obtain the IP-CPPOB certificate. The methods included literature review, observation, gap analysis, and recommendations with improvements. Before assistance, CPPOB nonconformity was 47% (33 findings) with a production facility rating of C. After assistance, compliance rose to 95% with only three nonconformities, raising the facility rating to A. The Wilcoxon Signed-Rank Test showed a significant difference (Asymp. Sig 0.000 < 0.05), indicating that the mentoring program effectively improved CPPOB implementation.
