      Abstract

Sucrose ester is an oleochemical surfactant derived from fatty acids of palm oil. Sucrose ester is a nonionic surfactant with a high affinity for water. This research aims to scale up the production of palm sucrose ester from laboratory scale to 20 kg. This process ensures that the successful laboratory procedure can be reproduced on a larger scale. The scale-up of sucrose ester involved optimization of mixing using a batch stirred tank reactor made of stainless steel 304, equipped with two types of impellers: turbine and anchor. The sucrose ester produced had an HLB value of 15-17. The highest yield of sucrose ester was 83%, with a surface/interfacial tension of 22.62 dyne/cm and 12.4 dyne/cm. The sucrose ester exhibited good foam stability and emulsion stability lasting up to three weeks of observation. The turbine impeller provided better mixing homogeneity compared to the anchor impeller, resulting in better performance of the sucrose ester produced using the turbine impeller.
