      Analisis Faktor Penyebab Kontaminasi Residu Antibiotik Chloramphenicol (CAP) dan Pengendaliannya (Studi Kasus PT Kelola Mina Laut Cikande)

      Abstract
      Rajungan kaleng pasteurisasi merupakan produk olahan dari daging rajungan dengan target pasar ekspor ke luar negeri. Proses produksi yang kompleks menjadikan produk olahan rajungan mudah mengalami penyimpangan kualitas. Salah satu penyimpangan kualitas yang dapat terjadi berupa kontaminasi residu antibiotik chloramphenicol yang dapat berakibat pada penolakan produk oleh konsumen. Perlu adanya analisis untuk mengetahui faktor yang menyebabkan terjadinya kontaminasi tersebut agar dapat dilakukan pengendalian. Analisis dilakukan menggunakan metode Failure Mode Effect Analysis (FMEA). Analisis metode FMEA menekankan pada penilaian aspek severity, occurrence, dan detection dari faktor penyebab kegagalan. Kemudian dilakukan perhitungan Risk Priority Number (RPN) untuk mengetahui tingkat prioritas atau kepentingan faktor terhadap kejadian kegagalan. Hasil analisis menunjukkan bahwa kualitas air yang digunakan pada proses pengukusan dan pencucian peralatan, kepatuhan pekerja dalam melaksanakan SOP, dan penggunaan bahan kimia untuk proses higiene dan sanitasi menjadi faktor prioritas atau utama penyebab kontaminasi. Perbaikan dapat dilakukan untuk aspek kualitas air dengan pengawasan yang ketat dan menjaga kualitas air. Kemudian terkait kemampuan pekerja bisa diterapkan pelatihan pengembangan kebiasaan baik pekerja serta evaluasi penggunaan bahan kimia pada proses higiene dan sanitasi.
       
      Pasteurized canned crab is a processed product from crab meat with the target market for export abroad. The complex production process makes processed crab products easy to experience quality deviations. One of the quality deviations that can occur is residual chloramphenicol antibiotic contamination which can result in product rejection by consumers. It is necessary to analyze to find out the factors that cause the contamination so that control can be carried out. The analysis was carried out using the Failure Mode Effect Analysis (FMEA) method. The FMEA method analysis emphasizes the assessment of severity, occurrence, and detection aspects of the factors that cause failure. Then the calculation of Risk Priority Number (RPN) is carried out to determine the level of priority or importance of factors to the failure event. The results of the analysis show that the quality of water used in the process of steaming and washing equipment, worker compliance in implementing SOPs, and the use of chemicals for hygiene and sanitation processes are the priority or main factors causing contamination. Improvements can be made to the water quality aspect with strict supervision and maintaining water quality. Then related to the ability of workers, training can be applied to develop good habits of workers and evaluate the use of chemicals in the hygiene and sanitation process.
