Sensory Customer Satisfaction Evaluation of Commercial Salty Crackers Through CATA, Kano, and TURF Methods
Abstract
Salty crackers experience consumption increase every year. Increased consumption has become a good opportunity for producers to compete in creating and developing products according to a market-orientation approach that emphasizes meeting customer needs and satisfaction with the products sold. This has evoked food sensory evaluation research by combining the Check-All-That-Apply (CATA), Kano, and Total Unduplicated Reach and Frequency (TURF) methods. 30 consumer panelists participated in evaluating the sensory of commercial salty crackers and 39 attributes obtained from Focus Group Discussion (FGD) were used as sensory references for each method. The methods of CATA can identify ideal attributes and consumer preferences, Kano can categorize consumer satisfaction with sample attributes, and TURF can determine the best flavor variants combination that can optimize product marketing. The results showed that consumers liked and felt satisfied if the salty crackers product had aroma and flavor of meaty, roasted, cheesy, salty and umami taste, crunchy and crispy texture, melting mouthfeel and umami aftertaste. Samples of abon gurih and cheese variant are the products which attributes fulfilled to the criteria of consumer preference and satisfaction. Additionally, the combination of product involving both variants resulted in high reach and frequency values. Concluded that products contained match attributes of consumer preferences and satisfaction will impact on broader market penetration. Crackers asin menjadi salah satu cemilan yang terus mengalami peningkatan konsumsi setiap tahunnya. Peningkatan konsumsi telah menjadi peluang baik bagi produsen untuk bersaing dalam menciptakan dan mengembangkan produk sesuai dengan pendekatan orientasi pasar yang menekankan pemenuhan kebutuhan dan kepuasan konsumen terhadap produk yang dijual. Hal ini telah mendorong riset evaluasi sensori pangan dengan mengkombinasikan metode Check-All-That-Apply (CATA), Kano, dan Total Unduplicated Reach and Frequency (TURF). 30 panelis konsumen berpartisipasi pada tahap evaluasi sensori produk crackers asin komersial dan 39 atribut hasil Focus Group Discussion (FGD) digunakan sebagai acuan sensori untuk setiap metode. Metode CATA dapat mengidentifikasi atribut ideal dan kesukaan konsumen, metode Kano dapat mengkategorikan kepuasan konsumen terhadap atribut sampel, dan metode TURF dapat menentukan kombinasi varian rasa terbaik yang dapat mengoptimalkan pemasaran produk. Hasil penelitian menunjukkan konsumen menyukai dan merasa puas jika produk crackers asin memiliki atribut aroma dan flavor meaty, roasted, cheesy, rasa asin dan umami, tekstur renyah and garing, melting mouthfeel and umami aftertaste. Sampel varian abon gurih dan varian keju merupakan produk yang atributnya memenuhi kriteria kesukaan dan kepuasan konsumen. Selain itu, kombinasi pemasaran produk yang melibatkan kedua varian tersebut menghasilkan nilai jangkauan dan frekuensi yang tinggi. Disimpulkan bahwa produk dengan atribut yang sesuai kesukaan dan kepuasan konsumen akan berdampak pada penetrasi pasar yang lebih luas.
