Pengembangan Produk Pie Kacang Merah Tinggi Kalsium Menggunakan Tepung Kepala Ikan Lele dan Tepung Chia Seeds
Abstract
Kepadatan tulang yang semakin menurun menyebabkan massa tulang semakin rapuh dan berkembang menjadi osteoporosis. Penelitian ini bertujuan untuk mengembangkan produk pie substitusi tepung terigu dengan tepung komposit sebagai alternatif produk tinggi kalsium untuk dewasa. Rancangan percobaan yang digunakan adalah rancangan acak lengkap dengan empat formula dengan substitusi tepung terigu dengan tepung komposit, yaitu F0 (100:0), F1 (93:7), F2 (86:14), dan F3 (79:21). Analisis yang digunakan adalah uji organoleptik (uji penerimaan), analisis fisik (warna dan tekstur), analisis proksimat, analisis kalsium, dan analisis bioavailabilitas kalsium. Analisis data menggunakan uji One-Way ANOVA dan independent sample T-test. Pie substitusi tepung terigu dengan tepung komposit menurunkan kesukaan panelis pada atribut warna, namun tidak mempengaruhi penilaian panelis pada atribut aroma, tekstur, rasa dan keseluruhan pie. Kadar abu, protein, lemak, kalsium dan bioavailabilitas pie substitusi tepung terigu dengan tepung komposit meningkat namun menurunkan kadar karbohidrat. F2 sebagai formula terpilih berdasarkan uji penerimaan dan kandungan kalsium produk. Takaran saji pie adalah 60 gram dan memenuhi kontribusi energi makanan selingan terhadap AKG untuk laki-laki dan perempuan usia 30–49 tahun. Produk pie memenuhi klaim tinggi kalsium. Penelitian ini menunjukan substitusi tepung terigu dengan tepung komposit pada produk pie dapat memberikan alternatif asupan zat gizi kalsium bagi konsumen dewasa. The decrease in bone density causes bone mass to become more brittle and develop osteoporosis. This research aims to develop a pie product by substituting wheat flour with composite flour as an alternative to high-calcium products for adults. The experimental design in this study use completely randomized design with four formulas by the substitution of wheat flour with composite, namely F0 (100:0) control, F1 (93:7), F2 (86:14), and F3 (79:21). The analysis organoleptic test (acceptance test), physical analysis (color and texture), proximate analysis, calcium analysis, and calcium bioavailability analysis. Data analysis uses One-Way ANOVA test and independent sample T-test. Pie substitution of wheat flour with composite flour, decrease the panelist’s preference level on the color attribute, but not affect the panelist’s preference on the attributes of aroma, texture, taste and overall pie. Pie substitution of wheat flour with composite flour increase ash content, protein, fat, calcium, and bioavailability calcium of pie but decrease carbohydrate content. F2 as the formula was chosen based on the acceptance test and the calcium content of the product. The serving size of pie is 60 grams and fulfills the energy contribution of snacks to the RDA for men and women aged 30-49 years. Pie products fulfills to the high calcium claim. This study shows that the substitution of wheat flour with composite flour in pie products can provide an alternative calcium intake for adult consumers.
