dc.description.abstractAbalone (Haliotis varia) which is live in the Ciwaru coastal waters is one of the sea snail that has not been exploited optimally. Abalone is a high economic value of seafood. Abalone has a length of 3.51 ± 0.24 cm, width of 2.55±0.16 cm, height 0.83±0.10 cm, and a total weight of 5.59±1.29 g. The yield of meat, offal, and successive shells fell by 42.01%, 18.12%, and 39.85%. Results of analysis of variance states that the environmental temperature differences in transport processes give real effect, and the best treatment is treatment 3. Proximate composition abalone on the moisture content ranges from 78-83%, ash content of 0.8 to 1.5%, from 0.4 to 2% fat content and protein content of 10-17%. Histological analysis of the results showed that the lower the ambient temperature, the network increasingly compact. Cd heavy metal content in the meat of 1.33 ± 0.13 ppm and 2.92 ± 2.09 ppm offal, Pb in the flesh is not detected, and the innards of 0.07 ± 0.21 ppm. Hg in meat and offal 0.063 ± 0.062 and 0.04 ± 0.03 ppm.id
