dc.description.abstractChemical composition, mineral and vitamin B12 contents were investigated in fresh and boiled asian moon scallop (A. pleuronectes) meat. Chemical composition were determined by proximat analysis, mineral content were determined by AAS (Atomic Absorption Spectrophotometer), and vitamin B12 was determined by HPLC (High Performance Liquid Chromatografi). Chemical composition and mineral of fresh asian moon scallop meat decreased after boiling process. The boiling precised water is proved which have mineral. The higher macro mineral content in the meat of asian moon scallop is kalium at 21,075 ppm and the smallest is magnesium at 3,600 ppm, while the largest micro mineral are iron at 966 ppm. Vitamin B12 content of fresh asian moon scallop meat is less than 0.23 ppmen
