      Karakteristik Fisik dan Kimia Keju dengan Koagulan Renet Domba Lokal Muda Berbentuk Serbuk dan Tablet.

      Abstract
      Cheese consumption trend in Indonesia is increasing year to year. As the consequences, local cheese industries is growing. The need for rennet coagulant is also increasing, but most of the rennet is still imported. On the other hand, the local lamb cuts has increased each year. Therefore, the purpose of this research was to compare the physical and chemical characteristics of cheese produced by rennet coagulant in tablet and powder forms produced from local lamb abomasum with commercially available one. The result showed that classified as semi hard and soft cheese based on MFFB. Whereas the value of yield, pH, TA, moisture, ash, protein content of cheese were not significantly affected by all form of rennet (P>0.05) but fat and lactose content were affected significantly (P<0.05).
       
      Konsumsi keju di Indonesia semakin meningkat dari tahun ke tahun. Hal ini memicu pertumbuhan Industri keju lokal. Kebutuhan renet sebagai koagulan juga meningkat, akan tetapi sebagian besar renet masih impor. Di sisi lain, pemotongan domba lokal muda semakin meningkat tiap tahunnya. Oleh karena itu, tujuan penelitian ini adalah membandingkan karakteristik fisik dan kimia keju dengan koagulan renet dalam bentuk tablet dengan renet dan serbuk yang diproduksi dari abomasum domba lokal muda dengan komersial. Hasil analisis menunjukkan bahwa keju yang dihasilkan berdasarkan Moisture on Fat Free Basis (MFFB) tergolong ke dalam keju semi keras dan keju lunak. Adapun nilai rendemen, pH, TAT, kadar air, kadar abu, dan kadar protein keju yang dihasilkan tidak dipengaruhi oleh semua bentuk renet (P>0.05), akan tetapi kadar lemak dan kadar laktosa dipengaruhi secara nyata (P<0.05).
