      Sifat Karkas dan Non Karkas Sapi Silangan Lokal Sapi Friesian Holstein serta Kerbau Rawa Jantan

      Abstract
      This study was aimed to compare the carcass and non carcass types of large ruminant in four slaughter houses. Twenty five male animals comprised 10 heads of crossbred cattle, 8 heads of Friesian Holstein and 7 heads of swamp buffalo. The data were obtained and analyzed by using analysis of variance (ANOVA), further between treatment where then tested by Duncan Multiple Range Test. The results showed that different types of large ruminant produced significantly different (P<0.05) carcass and non carcass traits. The bulls of Friesian Holstein had significantly higher (P<0.05) slaughter weight and carcass weight. However, crossbred beef cattle yielded significantly higher (P<0.05) dressing percentage compare to dairy type cattle and swamp buffalo. In general, the Frisian Holstein yielded significantly higher (P<0.05) non carcass weight (viscera, head, feet and tail) relatived to thus of crosbred beef cattle and swamp buffalo. In persentage basis, swamp buffalo had the higher skin and head, while viscera was the highest in dairy cattle and the tail of crossbred beef cattle was the highest
       
      Penelitian ini bertujuan untuk membandingkan sifat karkas dan non karkas pada ternak ruminansia besar yang dipotong di empat Rumah Pemotongan Hewan (RPH) yang berbeda. Sebanyak 25 ekor ternak jantan yang digunakan dalam penelitian ini terdiri atas: 10 ekor sapi silangan lokal, 8 ekor sapi Friesian Holstein (FH) dan 7 ekor kerbau rawa. Data dianalisis menggunakan analisis ragam (ANOVA), selanjutnya jika terdapat perbedaan antar perlakuan maka dilakukan uji lanjut dengan uji jarak berganda Duncan. Hasil penelitian menunjukkan bahwa tipe ternak berpengaruh nyata (P<0.05) terhadap sifat karkas dan non karkas. Sapi FH memiliki bobot potong dan bobot karkas nyata lebih tinggi (P<0.05) daripada sapi silangan lokal dan kerbau rawa. Namun demikian, sapi silangan lokal memiliki persentase karkas yang nyata lebih tinggi (P<0.05) daripada sapi FH dan kerbau rawa. Bobot non karkas FH (jeroan merah, jeroan hijau kosong, kaki dan ekor) secara umum nyata lebih tinggi (P<0.05) daripada sapi silangan lokal dan kerbau rawa. Kerbau rawa memiliki persentase kulit dan kepala yang paling tinggi, sementara FH memiliki persentase jeroan merah dan jeroan hijau kosong yang paling tinggi dan sapi silangan lokal memiliki persentase ekor tertinggi.
