      Abstract
      Short shelf life due to bacterial contamination is a major problem for sausages product. Use of teak leaf extract (Tectona grandis) that has antibacterial compounds could extend the shelf life of sausages naturally. The purpose of this study was to test the effectiveness of the use of teak leaf extract as an antimicrobial agent in beef sausage during cold storage. This study begins with the manufacture of teak leaf extracts then be phytochemical test, tested against pathogenic bacteria and Minimum Inhibitory Concentration (MIC) test. Sausage with the addition of teak leaf extracts tested in the presence of microbiological tests include TPC, E. coli, Salmonella spp. and S. aureus. Leaf extract of teak (Tectona grandis) has antimicrobial activity due to its ability to inhibit Bacillus cereus, Streptococcus thermophillus, aeroginosa Pseudomonas, Staphylococcus aureus and Escherichia coli. Teak leaf extract is added to the sausage showed effective inhibition against S. aureus at cold storage for 12 days
       
      Umur simpan yang pendek akibat kontaminasi bakteri menjadi masalah utama bagi produk sosis. Penggunaan ekstrak daun jati (Tectona grandis) yang memiliki senyawa antibakteri kemungkinan dapat memperpanjang umur simpan sosis secara alami. Tujuan penelitian ini adalah menguji efektivitas penggunaan ekstrak daun jati sebagai zat antimikroba pada sosis daging sapi selama penyimpanan dingin. Penelitian ini diawali dengan pembuatan ekstrak dari daun jati segar yang kemudian dilakukan uji fitokimia, uji konfrontasi terhadap bakteri patogen dan uji Minimum Inhibitory Concentration (MIC). Sosis dengan penambahan ekstrak daun jati diuji secara mikrobiologis yang meliputi uji keberadaan TPC, E. coli, Salmonella spp. dan S. aureus. Ekstrak daun jati (Tectona grandis) memiliki aktivitas antimikroba karena kemampuannya dalam menghambat Bacillus cereus, Streptococcus thermophillus, Pseudomonas aeroginosa, Staphylococcus aureus dan Eschericia coli. Ekstrak daun jati yang ditambahkan pada sosis menunjukkan penghambatan yang efektif terhadap S. aureus selama 12 hari penyimpanan dingin.
