      Pemanfaatan Cuka Air Kelapa Untuk Menghambat Pertumbuhan Bakteri Pada Daging Sapi

      Abstract
      Meat as one of protein source has to meet food safety criteria to be consumed, however fresh meat is susceptible to microorganism contamination by microorganisms. The addition of organic acid can inhibit the growth of bacteria, for example coconut water vinegar. The aims of this research was to study antimicrobial activities from coconut water vinegar and application as preservative on fresh beef. Treatments in this study are dipping meat in vinegar coconut water and acetic acid, were a concentration of the solution for vinegar coconut water is 4% while acetic acid is 1%. The results showed that vinegar coconut water could inhibit the growth of pathogenic bacteria Salmonella sp. and Staphylococcus aureus by in vitro analysis. Another result was 4% vinegar coconut water could be applicated as biopreservative for fresh beef because it could inhibit growth of total microbes.
       
      Daging sebagai salah satu sumber protein memiliki kriteria yang aman untuk dikonsumsi, namun daging segar mudah terkontaminasi oleh mikroorganisme. Penambahan asam organik dapat menghambat pertumbuhan bakteri, contohnya adalah cuka air kelapa. Tujuan dari penelitian ini adalah untuk mempelajari aktivitas antimikroba dari cuka air kelapa dan aplikasinya sebagai pengawet pada daging sapi segar. Perlakuan yang diberikan dalam penelitian ini adalah mencelupkan daging dalam cuka air kelapa dan asam asetat, konsentrasi larutan untuk cuka air kelapa adalah 4% sementara asam asetat adalah 1%. Hasil penelitian menunjukkan bahwa cuka air kelapa dapat menghambat pertumbuhan bakteri patogen Salmonella sp. dan Staphylococcus aureus dalam analisis in vitro. Hasil lain menunjukkan bahwa 4% cuka air kelapa dapat diaplikasikan sebagai biopreservatif untuk daging sapi segar yang dapat menghambat pertumbuhan total mikroba.
