Komposisi Karkas dan Sifat Fisik Daging Kelinci Lokal Jantan Muda dengan Pemberian Pakan Mengandung Limbah Tauge
Abstract
The waste of mung bean sprouts are recidual bean sprouts production consisting of greenpeal and bean sprout fraction of sieving result for human consumption. This research was conducted to measure carcass composition and meat physical characteristic of the young local male rabbitfattened with feed containing of sprout waste. The carcass composition measurement consisted of the slaughter weight, carcass weight, commercial cut weight, non carcass weight, the weight of carcass component (meat, fat, bone), the percentage of carcass proportion and commercial cut. The physical characteristics of meat which be measure were pH, water holding capacity, drip loss, and meat tenderness. This research used 12 young local male rabbits with age about 12 weekswith treatments of feed100% as control (P1), 85% P1 with 15% waste of bean sprouts (P2), 70% P1 with 30% waste of bean sprouts (P3), and 55% P1 with 45% the waste of bean sprouts (P4). The animals were raised for 8 weeks. The study showed that the provision of sprouts waste treatment did not significantly affect (P>0.05) on carcass characteristic. Result of all treatment on carcass composition tested also showed no significant differences (P>0.05). Weight and percentage of commercial rabbit cut were not significantly differences (P>0.05) in all the commercial cut (foreleg, rack, loin and hindleg). Distributions of carcass components (muscle, fat and bone) were not significantly (P>0.05) different each commercial cuts. The weight and percentage of non carcass showed that not significantly (P>0.05). The physical characteristis of rabbit meat showed that significantly (P<0.05) different in pH variable. It was conclude that bean sprout waste could be used as rabbit feed without decreasing carcass and meat quality.
