dc.description.abstractThe therapeutical effect of kefir made from goat milk was caused by the activity of antimicrobial agent from kefir's culture. These antimicrobial agents like bacteriocin, ethanol, organic acid, carbon dioxide and hydrogen peroxide inhibited the phatogen bacteria in intestine. The raw materail for kefir that used in this research is milk from saanen goat and crossed etawah - saanen (PESA) goat.en
