dc.description.abstractCounterfeit honey have flavor, aroma, and color resemble with original honey until difficult treat differently among both of them. Guarantee about originality and honey quality at domestic market don'1 exist, while suspicion honey counterfeiting always exist. Permeate test, bum test, crystallization test, and coagulation test acquainted by public not accurate for testing honey originality. Solubility test is accurate test at this moment. Research about change chemistry composition original honey and counterfeit honey during storage just a little. Whereas, change chemistry composition during storage constitute information made possible can useful to understand change honey characteristic. Honey storage in refrigerator is one of alternative to decrease descent honey quality, because on low temperature can inhibit fermentation and honey crystallization.id
