Kopi Robusta memiliki potensi untuk dikembangkan menjadi produk
dekafeinasi sebagai bentuk diversifikasi produk dan peningkatan nilai ekonomi.
Penelitian ini bertujuan menentukan hasil produksi biji kopi Robusta terdekafeinasi
pada skala laboratorium dan rancangan skala usaha, menghitung biaya produksi dan
harga pokok produksi (HPP) roasted decaf bean, menghitung biaya pemasaran dan
keuntungan sebagai dasar penentuan harga jual, serta mengkaji potensi nilai tambah
produk berdasarkan harga jual dan perbandingannya dengan produk sejenis di
pasar. Proses dekafeinasi dilakukan menggunakan filtrat labu siam melalui tahap
pengukusan pada suhu 100°C selama 30 menit, perendaman pada suhu 45°C selama
24 jam, pembilasan, pengeringan pada suhu 60°C selama 5 jam, dan penyangraian
pada suhu 190°C selama 15 menit. Hasil skala laboratorium menghasilkan 256,37
g green bean terdekafeinasi dari 250 g bahan awal, yang selanjutnya menjadi dasar
penyusunan rancangan skala usaha dengan kapasitas 10 Kg green bean
terdekafeinasi per batch. Rancangan tersebut menggunakan faktor pengali 39,01
sebagai pendekatan berbasis massa dan menghasilkan 7,54 Kg roasted decaf bean
per batch. Dengan basis produksi 13 batch per bulan, total biaya produksi yang
diperlukan sebesar Rp23.474.945 per bulan, dengan HPP sebesar Rp47.908 per
kemasan 200 g. Dengan biaya pemasaran sebesar 8% dan markup keuntungan
sebesar 20% dari HPP, diperoleh harga jual rancangan sebesar Rp61.322 per
kemasan 200 g. Harga tersebut berada di bawah harga produk pembanding di pasar
yang setara dengan Rp71.250–Rp108.800 per 200 g. Hasil tersebut menunjukkan
bahwa produk roasted decaf bean hasil rancangan memiliki potensi nilai tambah
berdasarkan hasil pengolahan dan posisi harga jualnya terhadap produk sejenis di
pasar. Robusta coffee has the potential to be developed into a decaffeinated product
as a form of product diversification and increased economic value. This study aimed
to determine the production yield of decaffeinated Robusta coffee beans at
laboratory scale and scale-up production design, calculate the production cost and
cost of goods manufactured (COGM) of roasted decaf bean, calculate the marketing
costs and profit as the basis for determining the selling price, and assess the
product's value-added potential based on its selling price and comparison with
similar products available in the market. The decaffeination process used chayote
(Sechium edule) filtrate through steaming at 100°C for 30 minutes, soaking at 45°C
for 24 hours, rinsing, drying at 60°C for 5 hours, and roasting at 190°C for 15
minutes. The laboratory-scale process produced 256.37 g of decaffeinated green
bean from 250 g of initial material, which was then used as the basis for a scale-up
production design with a capacity of 10 Kg of decaffeinated green bean per batch.
The design used a factor of 39.01 as a mass-based scaling approach and resulted in
7.54 kg of roasted decaf bean per batch. resulting in 7.54 Kg of roasted decaf bean
per batch. Based on a production basis of 13 batches per month, the total production
cost was Rp23,474,945 per month, with a COGM of Rp47,908 per 200 g package.
With marketing costs of 8% and a profit markup of 20% of COGM, the resulting
designed selling price was Rp61,322 per 200 g package. This price was lower than
the prices of comparable products in the market, which ranged from Rp71,250 to
Rp108,800 per 200 g. These results indicate that the designed roasted decaf bean
product has potential for added value based on its processing results and selling
price position relative to similar products in the market.
