| dc.description.abstract | Cellulose dust merupakan hasil samping pengolahan tepung porang yang masih mengandung glukomanan dan polisakarida lainnya, namun pemanfaatannya sebagai bahan pangan masih terbatas akibat tingginya kandungan residu sulfit, kalsium oksalat, serta karakteristik mutu yang belum memenuhi persyaratan. Pengembangan proses produksi fermented sour flour dilakukan untuk menghasilkan produk bernilai tambah dengan karakteristik yang sesuai sebagai bahan pangan. Proses dikembangkan melalui fermentasi menggunakan Lactobacillus plantarum dengan evaluasi terhadap karakteristik fisikokimia, fungsional, dan karakteristik cairan fermentasi untuk menentukan kondisi operasi optimum. Fermentasi selama 48 jam menghasilkan karakteristik terbaik yang ditunjukkan oleh penurunan residu sulfit dan kalsium oksalat, peningkatan derajat putih, serta karakteristik fungsional yang lebih baik tanpa menyebabkan penurunan kadar glukomanan secara signifikan. Proses yang dihasilkan mampu meningkatkan kualitas cellulose dust menjadi fermented sour flour sebagai alternatif pemanfaatan hasil samping pengolahan porang. Pengembangan proses ini memberikan dasar bagi penerapan produksi pada skala industri sekaligus mendukung peningkatan nilai tambah dan keberlanjutan pemanfaatan hasil samping agroindustri. | |
| dc.description.abstract | Cellulose dust is a by-product of konjac flour processing that still contains glucomannan and other polysaccharides. However, its utilization as a food ingredient remains limited due to its high sulfite residue and calcium oxalate contents, as well as quality characteristics that do not meet the required standards. A production process for fermented sour flour was developed to produce a valueadded food ingredient with improved quality characteristics. The process was developed through fermentation using Lactobacillus plantarum, followed by evaluation of the physicochemical, functional, and fermentation liquid characteristics to determine the optimum operating condition. Fermentation for 48 h resulted in the best product characteristics, as indicated by reduced sulfite residue and calcium oxalate contents, increased whiteness, and improved functional properties without significantly reducing glucomannan content. The developed process successfully upgraded cellulose dust into fermented sour flour as an alternative value-added utilization of konjac flour processing by-products. This process provides a scientific basis for industrial-scale production while promoting value addition and the sustainable utilization of agro-industrial by-products. | |
