      Perbaikan Proses Produksi Chips dan Tepung Porang untuk Memenuhi Standar Kualitas Ekspor di PT Agung Harada Agro

      Abstract
      PT Agung Harada Agro memproduksi chips dan tepung porang untuk memenuhi kebutuhan pasar ekspor. Hasil evaluasi menunjukkan bahwa mutu produk belum sepenuhnya memenuhi standar kualitas, ditandai dengan kadar abu yang tinggi, residu sulfur dioksida yang belum konsisten, pertumbuhan kapang pada chips porang selama penyimpanan, serta viskositas tepung yang belum memenuhi spesifikasi perusahaan. Tugas akhir ini bertujuan menyusun perbaikan proses produksi chips dan tepung porang untuk memenuhi standar kualitas ekspor. Pendekatan yang digunakan adalah desain keteknikan melalui tahapan eksplorasi, pendefinisian masalah, ideasi, pengembangan desain, dan validasi. Perbaikan proses dilakukan melalui tiga iterasi dengan modifikasi kondisi pengeringan, konsentrasi sulfur, serta perbaikan proses pengupasan dan pencucian. Evaluasi dilakukan terhadap kadar air, kadar abu, kandungan glukomanan, kadar kalsium oksalat, residu sulfur dioksida, viskositas, warna, dan pertumbuhan kapang. Iterasi kedua menghasilkan kondisi proses terbaik, yaitu metode two-stage drying pada suhu 90°C selama 2 jam dan 80°C selama 2,5 jam, ketebalan irisan 5 mm, serta penggunaan sulfur sebesar 0,3% dari bobot umbi. Kondisi tersebut menghasilkan kadar air 8,29% pada chips dan 8,08% pada tepung, kadar abu 3,94%, kandungan glukomanan 49,14% pada chips dan 86,04% pada tepung, residu sulfur dioksida 64,46 mg/kg pada chips dan 67,64 mg/kg pada tepung, serta viskositas tepung 26.340 mPa·s, tanpa pertumbuhan kapang selama penyimpanan. Seluruh parameter mutu telah memenuhi persyaratan Standar Nasional Indonesia (SNI) dan spesifikasi PT Agung Harada Agro. Dengan demikian, proses yang dikembangkan mampu meningkatkan mutu dan konsistensi kualitas chips dan tepung porang sehingga berpotensi mendukung pemenuhan standar kualitas produk ekspor.
       
      PT Agung Harada Agro produces porang chips and porang flour to meet export market demand. However, the products have not consistently met the required quality standards, as indicated by high ash content, inconsistent sulfur dioxide residues, mold growth in porang chips during storage, and flour viscosity below the company's specifications. This final project aimed to develop an improved production process for porang chips and porang flour to comply with export quality standards. An engineering design approach was applied through the stages of exploration, problem definition, ideation, design development, and validation. Process improvements were carried out through three production iterations involving modifications to drying conditions, sulfur concentration, and peeling and washing processes. Product quality was evaluated based on moisture content, ash content, glucomannan content, calcium oxalate content, sulfur dioxide residue, viscosity, color, and mold growth. The second iteration achieved the best processing conditions, consisting of two-stage drying at 90°C for 2 h followed by 80°C for 2.5 h, a slice thickness of 5 mm, and the application of 0.3% sulfur (w/w). Under these conditions, the products exhibited moisture contents of 8.29% for porang chips and 8.08% for porang flour, an ash content of 3.94%, glucomannan contents of 49.14% and 86.04%, sulfur dioxide residues of 64.46 mg/kg and 67.64 mg/kg, and a flour viscosity of 26,340 mPa·s, with no mold growth observed during storage. All quality parameters complied with the Indonesian National Standard (SNI) and PT Agung Harada Agro's quality specifications. Therefore, the developed process successfully improved the quality and consistency of porang chips and porang flour and has the potential to support compliance with export quality standards.
