      Perancangan Scale-up Proses Produksi Susu Nabati Berbasis Kacang Sacha Inchi (Plukenetia volubilis L.)

      Abstract
      Susu nabati berbasis kacang Sacha inchi (Plukenetia volubilis L.) berpotensi dikembangkan sebagai alternatif susu dengan nilai gizi tinggi, namun belum tersedia rancangan proses pada skala industri. Penelitian ini bertujuan merancang scale-up proses produksi serta mengevaluasi kelayakan finansialnya. Kapasitas produksi ditentukan menggunakan model Cost–Volume–Profit (CVP) nonlinier, kemudian dilakukan scale-up seluruh unit operasi berdasarkan kesetaraan parameter proses dan prinsip perancangan teknik. Rancangan menghasilkan kapasitas produksi sebesar 196.089 kg produk/ tahun dengan kebutuhan bahan baku 218,29 kg/batch sesuai hasil neraca massa. Analisis kelayakan finansial menunjukkan nilai NPV sebesar Rp11.626.712.399, ROI sebesar 57,18%, dan PBP selama 1,75 tahun, sehingga rancangan proses dinyatakan layak untuk dikembangkan pada skala industri.
       
      Sacha inchi (Plukenetia volubilis L.) milk has potential as a nutritious plant-based dairy alternative, but its industrial-scale production process has not been established. This study aimed to design the process scale-up and evaluate its economic feasibility. Production capacity was determined using a nonlinear Cost–Volume–Profit (CVP) model, followed by process scale-up based on process similarity and engineering design principles. The proposed design achieved an annual production capacity of 196,089 kg, with raw material requirement of 218.29 kg/batch as determined through mass balance analysis. Economic evaluation resulted in a NPV of IDR 11,626,712,399, ROI of 57.18%, and PBP of 1.75 years, indicating that the proposed production process is technically and economically feasible for industrial implementation.
