| dc.description.abstract | Golden Shot merupakan minuman fungsional siap konsumsi yang dikembangkan untuk pasar ekspor. Penelitian ini bertujuan mengembangkan formulasi produk, menentukan kondisi sterilisasi terbaik, mengevaluasi karakteristik mutu, dan menduga umur simpan menggunakan metode Accelerated Shelf-Life Testing (ASLT) dengan pendekatan Arrhenius. Penelitian meliputi pengembangan formulasi, sterilisasi pada 121°C selama 5 dan 10 menit, karakterisasi mutu, pengujian umur simpan pada suhu 30°C, 35°C, dan 45°C, serta validasi skala 10 L. Hasil penelitian menunjukkan bahwa formulasi F3 merupakan formulasi terbaik berdasarkan uji organoleptik dan evaluasi mitra industri. Sterilisasi pada 121°C selama 5 menit dipilih sebagai kondisi terbaik karena menghasilkan nilai F0 sebesar 4,89 menit, memenuhi keamanan mikrobiologis (ALT 0 CFU/mL), dan mampu mempertahankan mutu produk. Berdasarkan pendekatan Arrhenius, pH ditetapkan sebagai parameter kritis dengan estimasi umur simpan sementara sebesar 2,28 bulan pada 30°C, 2,07 bulan pada 35°C, dan 1,88 bulan pada 45°C. Hasil pendugaan tersebut masih bersifat sementara karena penyimpanan belum mencapai titik akhir. Hasil validasi pada skala 10 L menunjukkan proses menghasilkan mutu produk yang konsisten. | |
| dc.description.abstract | Golden Shot is a ready-to-drink functional beverage developed for the export market. This study aimed to develop the product formulation, determine the optimum sterilization condition, evaluate the quality characteristics, and estimate the shelf life using the Accelerated Shelf-Life Testing (ASLT) method with the Arrhenius approach. The study consisted of formulation development, sterilization at 121°C for 5 and 10 minutes, quality characterization, shelf-life testing at 30°C, 35°C, and 45°C, and process validation at a 10 L production scale. The results showed that formulation F3 was selected as the best formulation based on sensory evaluation and assessment by the industrial partner. Sterilization at 121°C for 5 minutes was determined as the optimum condition because it achieved an F0 value of 4.89 minutes, met the microbiological safety requirement (Total Plate Count of 0 CFU/mL), and maintained product quality. Based on the Arrhenius approach, pH was identified as the critical quality parameter, with preliminary estimated shelf lives of 2.28 months at 30°C, 2.07 months at 35°C, and 1.88 months at 45°C. Shelf-life estimates are preliminary as storage has not reached its endpoint. Validation at the 10L production scale demonstrated that the developed process was capable of consistently producing a product with stable quality. | |
