      Pengembangan Tepung Kulit Pisang Kepok (Musa paradisiaca L.) Sebagai Eksfolian Alami untuk Aplikasi Body Scrub

      Abstract
      Peningkatan produksi pisang di Indonesia menghasilkan limbah kulit pisang kepok dalam jumlah besar yang berpotensi dimanfaatkan sebagai eksfolian alami pada formulasi body scrub. Penelitian ini bertujuan merancang proses produksi tepung kulit pisang kepok, menentukan perlakuan perendaman terbaik, mengarakterisasi tepung, serta mengevaluasi karakteristik dan tingkat penerimaan body scrub. Pengaruh konsentrasi larutan NaCl (0,0%; 0,5%; dan 1,0%) serta lama perendaman (12, 18, dan 24 jam) terhadap pelarutan tanin dianalisis menggunakan rancangan acak lengkap faktorial, sedangkan perlakuan perendaman terbaik ditentukan berdasarkan kadar tanin dan atribut sensori menggunakan metode indeks efektivitas De Garmo. Lama perendaman berpengaruh nyata terhadap pelarutan tanin, sedangkan konsentrasi NaCl dan interaksinya tidak berpengaruh nyata. Perendaman menggunakan larutan NaCl 0,5% selama 24 jam menghasilkan nilai indeks efektivitas tertinggi (0,914) dan meningkatkan rendemen tepung menjadi 9,3 ± 0,3% (basis basah) atau 63 ± 3% (basis kering). Tepung hasil perlakuan terbaik memiliki kadar air 8,3 ± 0,1%, pH 6,39 ± 0,03, dan memenuhi persyaratan cemaran logam berat, serta morfologi partikel tidak beraturan berukuran 11,24–66,97 µm. Formulasi body scrub berukuran 60 mesh menunjukkan karakteristik fisik yang lebih baik dengan tingkat penerimaan sensori yang relatif sama. Tepung kulit pisang kepok berpotensi dimanfaatkan sebagai eksfolian alami dalam formulasi body scrub.
       
      The increasing production of bananas in Indonesia generates substantial quantities of kepok banana peel waste, offering considerable potential as a natural exfoliating agent for body scrub formulations. This study aimed to design a production process for kepok banana peel flour, determine the optimal soaking treatment, characterize the resulting flour, and evaluate the physicochemical properties and sensory acceptance of the formulated body scrub. The effects of NaCl concentration (0.0%, 0.5%, and 1.0%) and soaking duration (12, 18, and 24 h) on tannin leaching were investigated using a factorial completely randomized design. The optimal treatment was selected based on tannin content and sensory attributes using the De Garmo effectiveness index method. Soaking duration significantly affected tannin leaching, whereas NaCl concentration and its interaction with soaking duration showed no significant effects. Soaking in 0.5% NaCl for 24 h achieved the highest effectiveness index (0.914) and increased flour yield to 9.3 ± 0.3% (wet basis) or 63 ± 3% (dry basis). The resulting flour exhibited a moisture content of 8.3 ± 0.1%, a pH of 6.39 ± 0.03, irregularly shaped particles (11.24–66.97 µm), and heavy metal concentrations within permissible regulatory limits. The body scrub containing 60-mesh flour exhibited superior physicochemical properties while maintaining comparable sensory acceptance, demonstrating its potential as a natural exfoliating agent.
