Abstract

Good Manufacturing Practices (GMP) merupakan persyaratan dasar untuk menjamin keamanan dan mutu produk pangan. Penelitian ini bertujuan mengidentifikasi ketidaksesuaian penerapan GMP, menganalisis akar penyebab, dan menyusun implementasi perbaikan pada area powder blending di PT XYZ. Data diperoleh dari hasil inspeksi GMP periode Januari sampai dengan Mei 2026 dan dianalisis menggunakan analisis kesenjangan, diagram pareto, diagram fishbone, dan five whys analysis. Hasil penelitian menunjukkan bahwa bangunan, pengendalian hama, serta pembersihan dan sanitasi merupakan aspek prioritas dengan ketidaksesuaian dominan berupa kerusakan lantai epoxy, pintu tidak tertutup rapat, dan peralatan pendukung yang berdebu. Implementasi perbaikan dilakukan melalui perbaikan existing dan penyusunan dokumen berupa SOP, formulir, dan poster. Hasil monitoring menunjukkan skor aktual GMP sebesar 8,65 sehingga diperlukan pengendalian yang lebih preventif dan monitoring yang konsisten untuk mendukung keberlanjutan penerapan GMP di PT XYZ.

Good Manufacturing Practices (GMP) are fundamental aspeks for ensuring the safety and quality of food products. This study aims to identify nonconformities in GMP implementation, analyze their root causes, and develop corrective actions for the powder blending area at PT XYZ. Data were obtained from GMP inspection results for the period from January through May 2026 and analyzed using gap analysis, Pareto charts, fishbone diagrams, and the five whys analysis. The results indicate that facilities, pest control, and cleaning and sanitation are priority aspeks, with dominant non-conformities including damage to the epoxy flooring, doors that do not close tightly, and dusty support equipment. Corrective actions were implemented through improvements to existing systems and the development of documents such as SOPs, forms, and posters. Monitoring results showed an actual GMP score of 8.65, indicating that more preventive controls and consistent monitoring are needed to support the continued implementation of GMP at PT XYZ.
