      Identifikasi dan Penetapan Kadar Boraks Pada Tahu di Tiga Pasar Kota/Kabupaten Bogor Secara Kualitatif dan Kuantitatif

      Abstract
      Tahu merupakan pangan berbasis kedelai yang bergisi, namun kerap ditemukan penyalahgunaan boraks sebagai bahan tambahan ilegal untuk meningkatkan kekenyalan, memperbaiki tekstur, dan meningkatkan tekstur serta memperpanjang daya simpan pada pangan. Boraks merupakan bahan yang dilarang digunakan sebagai bahan tambahan pangan karena dapat membahayaka kesehatan bagi konsumen. Penelitian ini bertujuan menganalisis keberadaan boraks secara kualitatif pada tahu yang beredar di pasar tradisional Bogor, membandingkan hasil beberapa metode analisis kualitatif, serta menentukan kadar boraks secara kuantitatif pada sampel positif. Penelitian dilakukan dengan mengambil sampel tahu dari Pasar Dramaga, Pasar Leuwiliang, dan Pasar Anyar yang diuji menggunakan indikator alami, rapid test kit, dan spektrofotometri. Hasil menunjukkan dari 27 sampel yang dianalisis ditemukan 3 sampel (11,1%) positif mengandung boraks, yaitu tahu putih dari Pasar Dramaga serta tahu kuning dan tahu coklat dari Pasar Anyar dengan kadar 40,92 mg/kg hingga 58,38 mg/kg, melebihi batas aman BPOM (0 mg/kg).
       
      Tofu is a nutritious soy-based food; however, borax is often misused as an illegal food additive to increase firmness, improve texture, and extend shelf life. Borax is prohibited as a food additive because it poses a health risk to consumers. This study aims to qualitatively analyze the presence of borax in tofu sold in traditional markets in Bogor, compare the results of several qualitative analysis methods, and quantitatively determine borax levels in positive samples. The study was conducted by collecting tofu samples from Dramaga Market, Leuwiliang Market, and Anyar Market, which were tested using natural indicators, rapid test kits, and spectrophotometry. The results showed that out of 27 samples analyzed, 3 samples (11,1% ) tested positive for boric acid: white tofu from Dramaga Market and yellow and brown tofu from Anyar Market, with levels ranging from 40,92 mg/kg to 58,38 mg/kg—exceeding the BPOM safety limit (0 mg/kg).
