| dc.description.abstract | Penelitian ini mengevaluasi perbedaan potongan karkas komersial dan mineral daging (K, Fe, Zn, Se) pada lima rumpun domba lokal: Garut (DG), Compass Agrinak (DCA), Barbados Cross (DBC), Jonggol (DJ), dan Ekor Tipis (DET). Data sekunder 50 ekor domba jantan dianalisis menggunakan general linear model (GLM) dan uji Tukey, dengan 20 ekor di antaranya (DJ dan DET) turut dianalisis komposisi mineralnya. Hasil menunjukkan perbedaan rumpun nyata memengaruhi bobot dan persentase karkas (p < 0,05). DG menghasilkan persentase potongan leg dan shoulder tertinggi. DET unggul pada bobot absolut namun memiliki persentase leg terendah, mengindikasikan keunggulannya lebih dipengaruhi besarnya ukuran karkas dibanding efisiensi distribusi jaringan. DET juga memiliki lemak intermuskular dan mineral K lebih tinggi dari DJ, sedangkan DJ unggul pada kadar Fe. Kadar Zn dan Se antar-rumpun tidak berbeda nyata. Kesimpulannya, genetik rumpun memengaruhi persentase potongan karkas, dan perbedaan mineral DJ dan DET berkorelasi dengan bobot otot, meskipun pengaruh genetik ini belum dapat dipisahkan sepenuhnya dari bias faktor lokasi pemeliharaan asal ternak. | |
| dc.description.abstract | This study evaluated the differences in commercial carcass cuts and meat minerals (K, Fe, Zn, Se) across five local sheep breeds: Garut (DG), Compass Agrinak (DCA), Barbados Cross (DBC), Jonggol (DJ), and Javanese Thin-Tailed (DET). Secondary data from 50 rams were analyzed using a general linear model (GLM) and Tukey's test, with 20 of them (DJ and DET) further analyzed for mineral composition. The results indicated that breed significantly affected carcass weight and percentage (p < 0.05). DG yielded the highest percentage of leg and shoulder cuts. DET had the highest absolute weight but the lowest leg percentage, indicating its superiority is driven by carcass size rather than tissue distribution efficiency. DET also exhibited higher intermuscular fat and K levels than DJ, whereas DJ had higher Fe content. Zn and Se levels did not differ significantly among breeds. In conclusion, genetic traits influence carcass cut percentages, and mineral differences between DJ and DET correlate with muscle weight, although this genetic effect cannot be fully separated from the rearing location bias of the animals. | |
