| dc.description.abstract | Minyak patin mengandung asam lemak esensial bernilai gizi, namun masih belum banyak dikembangkan menjadi produk pangan inovatif yang memiliki daya terima konsumen tinggi dan juga nilai tambah ekonomi. Penelitian ini bertujuan meningkatkan nilai tambah hasil samping pengolahan ikan patin dengan mengembangkan diversifikasi produk inovatif permen gummy dan es krim minyak ikan patin serta menguji karakteristik fisikokimia masing-masing produk. Penelitian dilakukan melalui tiga tahap, yaitu: (1) ekstraksi minyak belly flap menggunakan metode wet dan dry rendering, (2) masking minyak menggunakan lemon oil pada konsentrasi 37,5%, dan (3) produksi permen gummy dan es krim patin oil. Minyak hasil ekstraksi memiliki nilai FFA 0,49%, PV 1,99 mEq/kg, p-AnV 19,26 mEq/kg, dan TOTOX 23,23 mEq/kg. Masking minyak belly flap menggunakan lemon oil pada konsentrasi 37,5% efektif menutupi aroma amis. Permen gummy dengan konsentrasi minyak patin + LO (lemon oil) 8 g merupakan perlakuan terbaik berdasarkan karakteristik fisikokimia, tetapi permen gummy dengan konsentrasi minyak patin + LO (lemon oil) 4 g memiliki karakteristik hedonik terbaik. Es krim dengan konsentrasi minyak patin + LO (lemon oil) 8 g merupakan perlakuan terbaik berdasarkan karakteristik fisikokimia, tetapi es krim dengan konsentrasi minyak patin + LO (lemon oil) kontrol memiliki karakteristik hedonik terbaik. | |
| dc.description.abstract | Catfish oil contains nutritionally valuable essential fatty acids. However, its utilization in innovative food products with high consumer acceptance and added economic value remains limited. This study aimed to enhance the value of catfish processing by-products through the development of innovative catfish oil-based gummy candy and ice cream and to evaluate the physicochemical characteristics of each product. The research was conducted in three stages: (1) extraction of belly flap oil using the wet and dry rendering method, (2) flavor masking using lemon oil at a concentration of 37.5%, and (3) production of catfish oil-based gummy candy and ice cream. The extracted oil exhibited a free fatty acid (FFA) value of 0.49%, a peroxide value (PV) of 1.99 mEq/kg, a p-anisidine value (p-AnV) of 19.26 mEq/kg, and a total oxidation (TOTOX) value of 23.23 mEq/kg. Flavor masking with 37.5% lemon oil effectively reduced the fishy odor of belly flap oil. Gummy candy formulated with 8 g catfish oil + LO exhibited the most favorable physicochemical characteristics, whereas the formulation containing 4 g catfish oil + LO showed the highest hedonic acceptance among panelists. Likewise, ice cream containing 8 g catfish oil combined with lemon oil (LO) demonstrated the best physicochemical characteristics; however, the control treatment (catfish oil + LO) achieved the highest hedonic acceptance. | |
