      Evaluasi Penerapan Good Hygiene Practices dan Rancangan HACCP pada Proses Produksi Kukis Vegan di PT XYZ

      Abstract
      Good Hygiene Practices (GHP) merupakan salah satu program persyaratan dasar (prerequisite program) yang wajib dipenuhi sebelum menerapkan Hazard Analysis Critical Control Point (HACCP). Penelitian ini bertujuan mengevaluasi penerapan GHP berdasarkan Codex CXC 1-1969 (Rev. 2022), mengidentifikasi kesenjangan penerapannya, serta menyusun rancangan HACCP pada proses produksi kukis vegan di PT XYZ. Evaluasi awal menunjukkan tingkat pemenuhan GHP sebesar 89%, dengan pemenuhan terendah pada subklausul 1.2 dan 6.2, masing-masing sebesar 60%. Guna mengatasi kesenjangan tersebut, tindakan perbaikan dilakukan hingga tingkat pemenuhan GHP meningkat signifikan menjadi 97% pada evaluasi ulang. Berdasarkan hasil perbaikan GHP tersebut, rancangan HACCP disusun mencakup lima langkah awal dan tujuh prinsip HACCP, yang menetapkan proses pemanggangan (160°C selama 35 menit) sebagai salah satu Titik Kendali Kritis (CCP). Temuan ini membuktikan bahwa evaluasi GHP efektif meningkatkan kesiapan PT XYZ dalam menerapkan HACCP menuju pencapaian sertifikasi keamanan pangan.
       
      Good Hygiene Practices (GHP) serve as an essential prerequisite program required prior to implementing Hazard Analysis Critical Control Point (HACCP). This study aimed to evaluate GHP implementation based on Codex CXC 1-1969 (Rev. 2022), identify implementation gaps, and develop a HACCP plan for the vegan cookie production process at PT XYZ. Initial evaluation revealed an overall GHP compliance rate of 89%, with the lowest compliance observed in subclauses 1.2 and 6.2 (60% each). To address these gaps, corrective actions were implemented, significantly increasing GHP compliance to 97% upon re-evaluation. Based on these GHP improvements, a HACCP plan incorporating the five preliminary steps and seven HACCP principles was established, identifying the baking stage (160°C, 35 minutes) as a Critical Control Point (CCP). These results demonstrate that systematic GHP evaluation effectively enhances PT XYZ’s readiness to implement HACCP toward achieving food safety certification.
