      Abstract
      Konsumsi natrium berlebih berisiko memicu hipertensi, sehingga diperlukan alternatif berupa garam fungsional rendah natrium. Penelitian ini bertujuan untuk menentukan karakteristik fisik, kimia, dan fungsional garam rumput laut berbahan baku makroalga hijau Halimeda macroloba dari Perairan Ujung Genteng. Metode penelitian meliputi preparasi sampel menjadi tepung, ekstraksi maserasi menggunakan pelarut etanol, serta formulasi garam dengan penambahan campuran NaCl dan KCl yang dibagi menjadi perlakuan P0 (0%), P1 (10%), P2 (11%), P3 (12%), dan P4 (13%). Hasil analisis menunjukkan bahwa tepung H. macroloba memiliki kadar air sebesar 4,986% dan kadar abu 11,290%, serta bebas dari cemaran logam berat. Proses formulasi menghasilkan nilai rendemen garam sebesar 9,10% pada P0 (0%) hingga 45,4% pada P4 (13%), dengan kadar NaCl tertinggi ditemukan pada perlakuan P4 (13%). Skrining fitokimia menunjukkan ekstrak mengandung senyawa aktif berupa alkaloid (Dragendorff dan Meyer), steroid, triterpenoid, fenol, dan tanin. Meskipun perlakuan P4 memberikan rendemen dan kadar NaCl tertinggi, perlakuan P1 (10%) ditetapkan sebagai formulasi terbaik karena menghasilkan rasio Na:K paling rendah yang ideal untuk menjaga kesehatan tubuh. Kesimpulan penelitian ini menunjukkan bahwa makroalga hijau H. macroloba memiliki potensi yang sangat tinggi untuk dikembangkan sebagai garam fungsional rendah natrium yang mengandung mineral tinggi makro esensial serta diperkaya komponen bioaktif alami.
       
      Excessive sodium consumption increases the risk of hypertension, necessitating alternatives such as low-sodium functional salt. This study aims to determine the physical, chemical, and functional characteristics of seaweed salt made from the green macroalga Halimeda macroloba from Ujung Genteng waters. The research methods involved sample preparation into flour, maceration extraction using ethanol, and salt formulation by adding a mixture of NaCl and KCl across several treatments: P0 (0%), P1 (10%), P2 (11%), P3 (12%), dan P4 (13%). The results indicated that H. macroloba flour contained 4.986% moisture and 11.290% ash, and was safe from heavy metal contamination. The formulation process yielded salt ranging concentration P0 (0%) from 9,10% to P4 (13%) accounts for 45,4%, with the highest NaCl content observed in treatment P4. Phytochemical screening showed that the extract contained active compounds including alkaloids (Dragendorff dan Meyer), steroids, triterpenoids, phenols, and tannins. Although treatment P4 (13%) produced the highest yield and NaCl content, treatment P1 (10% concentration) was determined as the best formulation due to its lowest Na:K ratio, which is highly beneficial for health. In conclusion, the green macroalga H. macroloba has a high potential to be developed as a low-sodium functional salt that is rich in essential macro minerals and enhanced with natural bioactive compounds.
